Hearty Split Pea Soup

This was delicious! It was easy and quick to put together and smelled so good as it cooked. I did break down and stir, though, partway through the cooking. It was eaten before I added the milk and was well-liked that way!

Szechwan Shrimp

It was fun to surprise my family with something different! It was quick, easy and delicious. I doubled the shrimp but tripled the sauce, and am glad that I had done so. We also liked putting half the garlic into the sauce, rather than all of it with the onion. Appreciate the reviewers who say what worked well for them - thanks.

Easy Pasta Fagioli

This is indeed easy and delicious. I doubled the amount of vegetables and substituted one can of diced tomatoes for 16 oz. of the tomato sauce. It was well-liked by us all.

Honey-Glazed Snack Mix

This is delicious. I used peanuts instead of pecans and that's good, too. I melted the butter in a glass measuring cup in the microwave on medium, then measured in the honey and mixed.

Gazpacho Slaw

This works with bagged coleslaw subbed in for the cabbage. We added a handful of chopped cilantro to the salad, too - really added to the taste. This is also good with a zesty Italian dressing. We ate it right away and it was delicious.

Prize Winning Baby Back Ribs

Delicious - the centerpiece of our 4th of July bbq! The spice mixture was wonderful - we didn't use any salt. Brushed the racks with chipotle grilling sauce at the end which added even more flavor and zip. We'll use this recipe over and over.

Minestrone Soup

Very good - added some garlic, used white beans instead of kidney beans. Needed more broth than listed so just added as needed. Topped each serving with a sprinkle of freshly grated Romano cheese - delicious!

Cowboy Casserole

On a wet, blustery evening like this one, this dish really hit the spot, even without biscuits which we forgot. It is everything we wanted in a "quick-after-soccer-practice" meal. It'll be a regular week night meal for us.

Super Sloppy Joes

This is DELICIOUS! I've made a single recipe and I've quadrupled it for a family party and it has been very well liked. For the large batch, I put it into a 6 quart slow cooker to simmer and that worked great. The only changes I've made are to use BBQ sauce instead of steak sauce and garlic instead of garlic salt.

Greek Pasta Salad I

This was very well liked by everyone at our recent barbecue party. I doubled the salad, but tripled the dressing because I expected to need to add more after chilling the salad overnight - and did use the remainder. I sub'd salami for pepperoni, and used grape tomatoes. Different pastas work well, too - try rotini or rigatoni.

Slow Cooker Taco Soup

I made this on the stove-top in less than 30 minutes because I was looking for something quick to fix for lunch. I sauteed the onions with the ground beef, then added all the other ingredients (but only 1 cup of water) and simmered it for about 20 minutes. WE LOVED IT!

Easy Chicken Tetrazzini

This is very good and easy, especially if you've cooked the chicken breasts ahead of time. I've also used cooked boneless turkey breast from the grocery store, which eliminated that pre-cooking step, and it was also delicious.
