Corned Beef and Cabbage

This was very good and so easy to fix. I added some apple juice to it and put the vegies (except cabbage) on bottom per the other suggestions. I will definitely fix this every St. Patty's day.

The flavor of this recipe was amazing. Although, the consistency was mushy. I will make this again but not as much ketchup sauce (like the other reviews suggested) and maybe more bread.

Janet's Rich Banana Bread

I baked these in three mini loaf pans. I mashed the bananas just because I don't like the look of chunky cooked bananas. They didn't need to cook an entire hour. The bread was moist and good. I will continue to make this recipe.

Cabbage Fat-Burning Soup

I love this soup! My changes were: I used two cans of chicken broth, and one quart of V8 juice (low sodium) and one quart of spicey hot V8 juice. I didn't use the onion soup mix because my son is allergic to dairy and it has Lactose in it. Also, I only used one bell pepper. It makes a huge pot. We will be eating it for days.

Egg Free Chocolate Chip Pumpkin Cookies

We really liked these cookies. Based upon the other reviews I used 1 cup of brown sugar and 1 cup of white sugar, 2 tsp of pumpkin spice instead of cinnamon, 1/2 cup of non-dairy margarine and 1/2 cup of butter flavored shortening. I rolled the dough in small balls and rolled in sugar. I liked the crunchy outside and soft inside. The only problem was my son ended up being allergic to the butter flavored shortening so next time I will either use regular shortening or all the non-dairy margarine. Will keep in my dessert folder.

Lower Fat Banana Bread II

This tasted great. Because my son is allergic to diary and eggs, I made a couple changes. I used rice milk and egg replacer. I also used an individual cinnamon applesauce. Everything turned out great. I did have to bake it a little longer than one hour, but that might just be my oven. Oh...I also baked this recipe in three mini loaf pans.

Thai Chicken Curry in Coconut Milk

I thought this dish was amazing! I didn't have a red bell pepper, so I used a yellow one. I also used regular coconut milk instead of light. I added carrots and served it over fettucini. It is a keeper for our family. Thanks.
