Marlene and her boys
About this Cook
I am a mother of two children (boys) one which is allergic to dairy, eggs, and shrimp and wife to my wonderful husband, Larry of 19 years. I work fulltime at a pathology lab in Irvine. I am a part time actor in Orange County performing in musical theatre.
My favorite things to cook
I like trying different kinds of food, but I seem to be limited due to my children and their likes and dislikes. My favorite food is Mexican. I love spicy Thai food too.
My favorite family cooking traditions
Our family cooking traditions center around the holidays. We have turkey for thanksgiving with mashed potatoes mixed with cream cheese and whipping cream (very fattening). We make my mom's potatoes at Christmas. And our immediate family celebrates Hanakkuh where we have a garlic brisket and latkes. Family traditions center around food so much of the time. Our family dip and chip is a garlic cream cheese dip served with Ruffles. Yum!
My cooking triumphs
I stick to recipes that work right now. I make an awesome Chicken Tortilla Soup, Chile, and Enchilades.
My cooking tragedies
Don't we all have stories? I seem to always burn the bread, mostly because I try to multi-task which sometimes is a big mistake.

Tres Leches (Milk Cake)
I made this for Christmas party this year. I used heavy whipping cream instead of whole milk. I will make this again for sure.

Green Salad with Cranberry Vinaigrette
I took this salad to a Christmas Ornament Exchange party. It was very pretty and tasted great. I used Feta instead of Blue Cheese and bought candy coated walnuts instead of making my own. It was very festive.

Easy Seven Layer Vegetable Salad
This recipe brought back so many memories for me. My mom use to make this for every big family gathering. As a kid, I couldn't stand it but as I grew up it became one of my favorite salads. I substitute brocoli for the cauliflower and add some spinach to the lettuce.
