As you can see, I served the carnitas in a flour tortilla, with toppings of cheese, salsa, and sliced red bell peppers. I would've added red onion if I'd had any, also. Actually I might've sauteed the peppers & onion together if I'd thought about it at the time -- but I only just now thought of that, ha!
