Beef Stew, Mashed Potatoes (I invent new kinds frequently), Muffins, lemon bars, chicken fajitas, BBQ chicken, Desserts
My cooking triumphs
Well...I did make an awesome carrot cake today. It took about 2 1/2 hours, but it came out awesome. Better than any restaurant carrot cake I have ever had. So, that was good.
My cooking tragedies
On my second date with the man who would become my husband, he asked for me to make chicken cordon bleu. I had never even seen it before, but I logged on and tried to find a well-rated recipe that was easy to follow. Even with my mom's help it just came out pasty and gross looking. I think something went wrong with the batter, but it came out....slimy. So much for showing off my cooking skills and wooing my one day husband! He ate it though and was trying very hard to be convincing when he said it was wonderful. Poor guy!

Chicken Pot Pie I
I would say this is an average recipe for pot pie. It wasn't spectacular, but then I never was a huge fan of pot pie in the first place. I added 1/2 cup condensed milk to the cream of chicken soup along with 1/8 tsp garlic powder, 1/4 tsp Mrs. Dash Original and a pinch of oregano along with a bit of black pepper. It came out well, and I will probably make it again sometime in the future. It's easy, simple, and good for a cold day.

Streusel Topped Blueberry Muffins
I read through the reviews and it seems there was a common theme that some people thought these were too bland. I used 1/2 tsp lemon zest, and I added 1/2 tsp cinnamon and 1/4 cup brown sugar to the batter. I think they came out very well, and I don't feel that the batter turned out bland at all. I will be making these again in the future.

Carrot Cake III
This was an awesome recipe! I added 2 cups of carrots and 1 cup strained crushed pinapple that I dried moderatly with paper towels. I also added an extra teaspoon of cinnamon and a pinch of nutmeg, and I used walnuts since the grocery store was out of pecans. It came out wonderfully. I did have to bake it an extra 10 minutes to make sure the middle was cooked all the way through, but it is moist and firm. I also added just a pinch of lemon zest to the icing to give it a little zing. Wonderful cake, my husband loves it!
