Texas Chicken Quesadillas

Really good. Did make some changes. Used two roasted chicken breasts from the deli and skipped the barbecue sauce. Brushed the tortillas with taco sauce before putting chicken, onion and cheeses on top. The cooked onions in this were spectacular and really elevated this dish to something special. My husband and I both LOVED these quesadillas. Will certainly make again!

Italian Beef Sandwiches

Like everyone else raised in Chicago and no longer living there, I get such a taste for this sandwich from time to time. Have tried many different recipes and this is one of the best. Made just as directed, except that I just put minced garlic in the liquid instead of into the meat itself. Just the right amount of seasoning and very tender beef. Thanks much, Dick. We will make this again!

Rustic Multi-Grain Bread

This is a wonderful bread! I mixed the 1/2 cup water (heated to just warm) with the yeast and 1 T. of the sugar. Let sit while I mixed the dry ingredients. Mixed with other ingredients as written in recipe. Probably added about another cup of all-purpose flour. Used my Kitchenaid Mixer to knead the bread. Loved the method of forming the bread. Really pretty when it was done. Also, this bread holds together very well while still being light and very tasty. Great for sandwiches or toast. Thanks for the recipe, Dorothy.

Cranberry Nut Bread I

This tasted really great. It was a bit more crumbly than I would have liked, however. Difficult to cut into slices. Think that I will try a different recipe next time.

Sugar Coated Pecans

Oh my! These are fantastic. Brought them to a friend as a hostess gift last night and they were a hit. I did follow one reviewer's advice and simply stirred the sugar mixture into the bowl of pecans and egg whites a third at a time. Worked just great. Also used parchment paper on my baking sheet and sprayed it lightly with cooking spray.

Shrimp Dip I

So yummy and so easy. Kept in the fridge for at least a week and brought out every once in awhile to serve with crackers. Will certainly make again. Next time might try a splash of shrimp sauce or a dash of Old Bay to amp up the flavor just a bit. Very good recipe!

This broth tasted good, but I won't make this again as I think that I am just not a fan of this kind of soup. If you like frozen mixed veggies, however, you will probably like this as well.

Tackee David's Split Pea with Ham

I don't know what it was exactly, but we really didn't like this and we love pea soup. I actually threw it out. I can only guess it was the combination of spices. I did use a pork hock rather than a ham bone, so maybe that had an off taste. Don't know, but it wasn't good. Sorry.

Autumn Harvest Cookies

These didn't spread out at all. I ended up with tiny little round cookies. My husband really loved them, so I will probably make them again. I though that they were a little on the dry side, but tasted good.

Barbeque Style Braised Short Ribs

This was fabulous! It was just my husband and me so I used four ribs totaling about 2 lbs. Cut the sauce ingredients in half. Served with mashed potatoes a salad. This gravy over the mashed potatoes was unbelievably good and the meat tasted wonderful and cut with a fork. We both wished that I had cooked six ribs and we would have eaten more! Thanks for a recipe that I will return to often.

Cranberry Couscous Salad

Very good. Refreshing, sweet, crispy and tasty. I have never cooked or eaten couscous before. Used the Near East mix with roasted garlic & olive oil for dinner the night before last with steak on the grill. We loved it. Then last night I used the left over couscous to make this salad and served with pork tenderloin patties topped with a slice of onion, a slice of tomato, wrapped in bacon and roasted in the oven. It was perfect. Will make couscous and this salad many times in the future. Only change that I made was to use red wine vinegar instead of balsamic as we don't care for the taste of balsalmic vinegar.

Flatlander Chili

This is a very basic, but very good chili. I mixed the dry spices together and put half of them in as I was afraid that it would be too spicy for us as written. Cooked for a half hour or so, tasted chili and threw the other half in. Just about perfect for us as written. I did also added a small can of mild chopped chilis and I used half ground venison and half ground chuck.

Grilled Pork Loin Chops

These chops were very tender, but I thought that the marinade gave them a terrible flavor. It must have been the seasonings that I did not like as the liquid ingredients are quite common in most marinades that I like very much. Sorry. Won't be making this again.

Honey Glazed Pork Tenderloin

Didn't like this at all. All we could taste was the sesame oil. And the dish has been soaking for two days and it still isn't rid of the baked on stuff. Sorry. Won't be making this again.

Cold Tuna Macaroni Salad

My husband said that this was the best macaroni salad that he had ever had. I think that I agree. I cut recipe in half and it was enough for the two of us for dinner one night and lunch the next day. I also added some chopped sweet red pepper and some chopped onion. Yummy. Thanks "D"

This salad is great! The dressing was so wonderful! The two together almost taste like dessert they are so good. We will have this often. Next time I will add the pecans as another reviewer suggested.

Iced Mochas

This was the perfect late afternoon pick-me-up treat for my husband and I yesterday on an incredibly hot day! I did think that it could have used a bit more coffee taste, though, so will use more of the ice cubes next time. Thanks for a great recipe, Wendycain!
