Low Carb Cauliflower Leek Soup

Reviewed: Jan. 2, 2006
I love this soup and have it for lunch nearly every day. The texture is a bit more thin than a Potato and Leek Soup but that is to be expected in a low carb version and the flavor is outstanding. I now make it with 6 cups of broth instead of 8 but it's great either way. I also wanted to mention that if what you want is potato and leek soup then MAKE potato and leek soup and refrain from giving this recipe a low score because it isn't something that it never claimed to be. It's not rocket science people. Really. Thanks for the recipe!

Raspberry Cheesecake Stuffed French Toast

So good and though I didn't need to change a thing I did replace half of the milk with orange juice on my second try - added a nice twist. Thanks!

Strawberry Pretzel Salad

Love this recipe & I get requests for it all the time. Make sure to spread the cream cheese mixture all the way to the edges - it keeps the jello from making the crust mushy. Thanks Betty!

Fried Empanadas

Reviewed: Oct. 24, 2005
This is the only empanada recipe that I've tried and I see no reason to look further! So good that my family can hardly wait for them to cool. I think the raisins add such great flavor - I like to chop them up. This is going into my recipe box. Thanks!

Excellent! So popular in my house that they are on a weekly rotation. Leftovers make great sandwiches for lunch the next day. Thanks Robyn!

Banana Oatmeal Bread

This was just what I was craving - dense banana bread with a lot of flavor. I omitted the raisins and added chocolate chips - so good! This one is going in my recipe box. Thanks Carolyn!

Caramel Apple Pork Chops

Reviewed: Oct. 24, 2005
Excellent fall recipe! My family has requested this repeatedly. I have made it two ways - exactly as the recipes states and as other reviewers have suggested by adding some liquid to the pan in the oven (apple juice) I liked it better with the juice but it was great either way. I have not added the pecans - I'm sure that would make it even better. This is going in to my permanent recipe file. Thanks Karena!

Old Fashioned Coconut Cream Pie

Reviewed: Apr. 23, 2005
This pie was incredible! I used cornstarch - as others have suggested - and used whipping cream and milk. For the crust I used a store bought shortbread crust - so good. I made this pie on a tuesday and it was already being requested that weekend. I cooked all of the ingredients in the microwave - I tend to scorch milk - that worked beautifully. A friend told me it was THE BEST pie she had ever eaten. I would give it more stars if I could.

Crab Rangoon III

Reviewed: Apr. 9, 2005
This is a good basic recipe. I cut the crab down to 1/4 of a can as other reviewers suggested. I left out the water chesnuts and added a tablespoon of soy sauce. Delicious! The wontons are thinner, but I think that allows you to taste the filling more. Thanks!

Shrimp Linguine Alfredo

Reviewed: Mar. 16, 2005
This recipe is excellent, creamy and exactly what I expect when I think of alfredo sauce. The key is to use a good quality parmesean. I did add 1 T of cornstarch, as suggested by others, and I added the cheese during the cooking process. I made this for my husband's birthday and he said that it was the best he's had. This could only be improved by using fresh pasta - it's a keeper!

Bakery Shop Icing

Reviewed: Dec. 30, 2004
This was exactly what I was looking for! Fluffy and not too sweet. I used heavy whipping cream instead of milk and inadvertently doubled the butter (which I wouldn't recommend - it still tasted great but I could feel my arteries closing a bit with each heavenly bite) AND my husband kept returning to kitchen to sneak bites which is something I have NEVER seen him do with frosting. Used if for my 1 year old's birthday cake. Perfect! Thanks!
