Quick Chili II
Easy and delicious. I used a can of Ro-Tel tomatoes and chilies instead of 1 cup of the water and the green chilies. The leftovers were even better!

Wonderful Short Ribs
This was easy and really delicious. I browned the ribs first and put them in the oven at 325 degrees and they were done perfectly. If you are bothered by the fat in the short ribs, use leaner chuck stew meat or, better yet, make the recipe ahead, refrigerate it, remove the fat and reheat.

Strawberry Spinach Salad II
This salad has become a family classic. I do adjust the sugar based on the sweetness of the strawberries, but use all the other ingredients - I buy poppy seeds just to make this salad. It's a must-have at our summer picnics.
