Melt-In-Your-Mouth Short Ribs
The short ribs at my grocery were very fat so I substituted a couple of beef shanks at half the price. Each shank has a big marrow bone which lends a lot of flavor. We really enjoyed these.

The Best Meatballs
I couldn't rate this higher because ground veal and pork were not in my store in this small town. I substituted ground turkey for the veal, since in Israel turkey is frequently substituted. I purchased some cubed pork steaks, cut in small pieces and put them in my food processor for a few seconds to get ground pork. Very good flavor in this recipe and the texture was great, different from all beef. With my substitutions it was a 5

Spaghetti Torte
I made this with spaghetti squash. Cut squash in half, scrape out seeds, invert on plate with 1/3c water and microwave 8 minutes or until the squash can be easily scraped out with a fork. Squash was plenty moist. Reheats great. I added artichoke hearts to the recipe but they added neither texture nor taste.
