Chef John's Macaroni and Cheese

My family and I loved this! However, I tasted while cooking and intensified the seasonings, probably close to doubling the thyme, cayenne pepper and nutmeg. Also, for those who might not have the suggested cheese on-hand (like me), I used half gruyere and half colby jack and it worked out fine. I didn't like it when cooks rated a recipe high and then changed it, but it seems everyone does it and the "here's what I dids" are helpful.

Golden Sweet Cornbread

I made this exactly as the recipe stated. I thought it was good, but not exceptional. It was picture-perfect--nice and golden on the top and the round shape was not a problem. I've read a few of the other reviews and I really can't see how any of those changes would have made it better. I would definitely not have cut out the sugar. Guess I just like mine sweet! I think I would look for another recipe next time, just to see what else is out there.

Garlic Bread Fantastique

I did not read the reviews beforehand and made this exactly as specified. The bread turned out soggy and way too salty. I've had so many other versions that were so much better. I will not make this again.

Green Onion-Parmesan Mornay Sauce

Bacon for the Family or a Crowd

The first time I made bacon this way, everyone commented on how good it was! (they were all still sleeping when I made it, so they had no idea it was a different method). The big problem I had, however, was that cooking at 350 degrees in my oven took about 40 minutes which was discouraging. I have since upped the temp to 450 degrees and it still takes close to 15 minutes. In the end, this is the best way to make bacon. No more pan frying or microwaving which is akin to watching water boil! Time saving, delicious, five stars!

Herbed Greek Roasted Potatoes with Feta Cheese

Chicken Fettuccini Alfredo

This is the first review I have ever given, motivated by this perfect chicken dish! I followed the recipe exactly and it was worth the effort. My teenage son and his two friends just couldn't get enough and the recipe will go into the family favorites category. I don't typically like to repeat recipes as there are so many to try, but this is a keeper --thank you!
