Chocolate Cake II

This is easy to make with items on hand. It has a great texture, is moist and tasted better the second day. That said, I found the flavor flat. As a vehicle for homemade frosting the cake was "fine," but alone it tasted pretty bland. I think the addition of some salt would really help it along. Also, is it possible that vinegar is a missing ingredient here. Most baking soda cakes have a bit of vinegar and THAT may be what's missing.

Dutch Apple Bread

Very good and easy to make. I used 1/3 cup canola oil in the batter in place of butter. Turned out fine. Added cinnamon to the batter and increased the cinnamon in the crumb topping. This is almost like a pound cake, dense and good.

Cherry Hazelnut Biscotti

This is a wonderful recipe which can be adapted to any flavors you like. I wanted to use up some pecans I had and also like almond so I used almond extract instead of lemon juice and added the pecans instead of hazelnuts. The dough was gloppy and hard to work into logs but dampening my hands helped me wrestle it into the shape I needed and these baked up beautifully. They came out crunchy and wonderful after the second bake and I dipped them in milk chocolate. Christmas is the day after tomorrow and I think these will be a new tradition. I don't care for the flavor of butter and was so happy to find a recipe calling for veggie oil instead. Thanks for sharing Ruth!

Banana Crumb Muffins

Very easy and very good. Nice moist muffins with a crunchy crumb topping. I added the vanilla and cinnamon to the batter as suggested here. I also used Smart Balance margarine for the crumb topping and it worked fine. Used 1/4 cup canola oil instead of 1/3 cup butter for the batter... Trying to get a little less saturated fat into my kids. This recipe gave me 12 big muffins in my regular cupcake pan.

Caramel Brownies III

This is a great recipe just like a friend gave me years ago. Our version cuts the squares small and coats them in powdered sugar (after cooling) as they are sticky.

Chocolate Caramel Brownies

A friend gave me this recipe long ago, minus the nuts. In our version you cut the squares small and coat each one in powdered sugar, which helps as the squares are very sticky. These are almost like a candy.

Apple Spice Snack Cake

WOW! This is a great recipe... So easy and very delicious results. My kids devoured this and enjoyed taking some in their lunchboxes. I used 3 egg whites instead of 2 whole eggs and it worked well. Also made a simple powdered sugar glaze to drizzle on top, to make it look pretty. My 13 x 9 pan was busy so I used my stoneware bundt pan and it turned out beautifully! This cake would be perfect for a pitch-in. Does NOT taste like it came from a cake mix. There are some good sugar-free pie filling varieties, sweetened with Splenda, and I may try one of those next time. Thanks for this great recipe!

Honey Mustard Dressing

This dressing is delicious! I was looking for a non-mayo honey mustard and this is it. Use canola oil so it is a healthy choice. The dressing turns out creamy despite using neither mayo nor buttermilk. My kids love the little tubs of honey mustard dressing they offer at all the counter service establishments at Walt Disney World. It turns out that dressing is only available at Disney. This recipe is actually very similar and I know I will get some salads into my kids with this yummy dressing on top. I may try it next time without the garlic as most kids like things smooth. Store this in a shaker bottle in the fridge so you can shake it back up before serving.

Ricotta Cheese Cake

Great recipe. This is basically the same one my Mom has made for years, with the recipe coming from her friend Barbara T (who is married to a man who emigrated to the USA from Italy as a teen). Barbara has great Italian food recipes from his family... The ricotta makes this cake very dense and moist. In our family it is always served cold with whipped cream or Cool Whip and sugared strawberries on top. It's sort of an Italian pound cake...

Taffy Apple Salad

This is delicious with a meal or for dessert. The version I know uses walnuts or pecans; now I will try it with peanuts... Whenever I bring this to a pitch-in, everyone wants the recipe! Wonderful in any season. I always double it so we have some for us back home!
