Ground Chicken Gumbo

Delicious. I have a garden full of okra and green peppers and this used up a good portion of both. I gave it a 4 star b/c I thought the ground chicken was rather odd. We used chopped up chicken breast and are planning on making again with shrimp. This isn't a spicy gumbo, but a traditional gumbo isn't meant to be hot - rather a subtle blend of flavor. Tabasco is traditionally served on the side for those who prefer a little more 'fire'.

Chicken and Dumplings II

Delicious. Omitted the carrots since I didn't have any on hand, but otherwise made as written. The entire family enjoyed this. We'll make again as a way to use leftover chicken.

Ultimate Chicken Fingers

These were great! Quick to make and the family loved them. I used Garlic Salt rather than regular and also used the butter as directed. They had great flavor and I was pleased with how the breading turned out. Let's be honest - they're not deep fried, so you're not going to get that thick, hard crunchy breading. But this was a very close oven baked copy. We'll be making these again.

Irish Soda Bread

Absolutely wonderful. Great flavor, easy to make, looks very impressive when you pull it out of the oven. As stated in the recipe, the dough is EXTREMELY sticky, but the bread turned out well. I'll be making this year-round.

Eh. These were okay. Very crispy, not the lemony-est cookies I've ever had. I might make them again in a pinch, but I think I'll keep looking for the perfect lemon crisp.

Lemon Sugar Tea Cookies

Wonderful recipe. I substituted honey for the corn syrup and used lemon zest and the juice of a small lemon in place of the extract. I slightly increased my flour to make up the difference. Cookies had a great taste, but are slightly tricky to bake. Keep an eye on them, no matter what the timer says. Mine needed a few extra minutes. Highly recommend using the parchment paper.

Bread Machine Focaccia

Excellent. Easy to make and shape, tasted wonderful. Served with olive oil and italian herbs as a dip for a party to rave reviews. We've been baking on our gas grill this summer and this recipe turned out quite well. I reduced the heat by 50 degrees and baked for the full time specified.

Rhubarb Crumble Pie

Excellent flavor, very nice consistency. I wanted to make a pie but was too lazy to make a crust. This recipe worked out great - like a 'crisp' in a pie plate. I cut back my sugar slightly only because I didn't have the full amount of rhubarb.

Swiss Steak Quick and Easy

Excellent. I did add seasoned salt to the flour before dredging. Other than that followed to a "T". Good flavor, cube steak was quite tender. Served with Mashed Potatoes instead of egg noodles. Thanks for a good recipe!

Dilly Potato Salad

Got rave reviews - but I have to confess to a little tweaking. I didn't have any yogurt, so I used mayo and sour cream. I used my garlic press to add two cloves of garlic with the potatoes. I also added salt to taste. I've never made potato salad before and this recipe was so easy!

Easy Garlic-Lemon Scallops

Easy and delicious. I served over angel hair pasta with fresh grated parmesan. Regarding the reviews that slammed this recipe because of the amount of butter - DUH! Couldn't you tell before you started cooking? I love butter. If I was dieting, this wouldn't be the way I'd prepare my scallops. But I'm not - and this recipe makes me so happy that I'm not! This is an enthusiastic 5 star rating.

Italian Spaghetti Sauce with Meatballs

Long story short, I thought I had spaghetti sauce in the cupboard. I didn't. I had to make sauce, so I chose this recipe because I had all ingredients on hand and it looked easy enough. Fast forward to now. The only reason my husband has stopped raving about this meal is that he went to bed. He said that this ranks in the Top 5 meals I've ever made..... He also asked me to make additional batches to put in the freezer so we always have some on-hand. I've never gotten this kind of reaction from him before. Who knew it was this easy? Anyhow, I made the recipe almost as written. I only had crushed tomatoes, so I used those instead of whole. Also, I did have to add about 1/3 cup of water toward the end of the final 30 minutes, but that was it. Obviously I'll be making this again. Thanks for a great recipe, Jeremy!

Oh My! Definitely cleared up my sinuses - works almost as well as NyQuil. I don't think I'd drink this for pleasure, but I'll give it two thumbs up for medicinal purposes.

Apple Cinnamon Cheesecake by EAGLE BRAND®

Delicious - I like the fact that the apple flavor is inside the main body of the cake. Crust is very unusual and makes for a great change from the traditional graham cracker crusts. The apples on top make for a nice texture contrast. Batter is VERY runny, much more than most cheesecakes, but bakes up firm. Make sure there are no holes or cracks in the crust when putting together. Also, I recommend wrapping the base of your springform in aluminum foil to prevent any grease from seeping out into the oven. I probably should have given mine an extra 10 minutes in the oven, but my oven tends to run cool. Overall a great fall cheesecake.

French Buttercream Frosting

Very easy to make, very easy to work with. It made enough icing to frost and fill a 2 layer 9" round cake and do some decorative accents on the top and sides. Took food color very well, too. I'm extremely pleased with how easy this frosting was to work with. It did stiffen up nicely when cooled. The flavor was good, for buttercream. The kiddos loved it.

BBQ Chuck Roast

This made my mother-in-law drool. The meat was melt in your mouth tender with an incredible flavor. We cooked to approximately 142 degrees and it was a medium cook roast, which we prefer. This was our first time using our rotisserie (a gift from said mother-in-law) and this roast really made us look like experts! Thank you, Sue!
