French Toast Casserole

Very easy to make - I doubled the recipe. Everyone loved it! Next time I will cut the bread up the night before to save time in the morning. I'm not sure if you can prepare the whole recipe the night before like you do for an egg strata casserole, but a little prep the night before will help get it in the oven sooner.

Golden Corn Casserole

I took this to a family gathering and was told to make this a new family tradition. I made the recipe exactly as written. I had to cook it about 20 minutes longer than called for - the dish I used may have been a smaller and deeper dish than Marcia uses. I baked it at home and brought it in a casserole carrier to a party. It was gone so fast and everyone was looking for more. Great recipe!

A-Number-1 Banana Cake

Oh my goodness!!!! This cake was awesome!! I made this for a family gathering and it got rave reviews. We ended up eating it without frosting, although it would have been good that way too. I made the batter exactly as written and I baked it in a 9x13 pan for about 45 minutes. As others had mentioned, it has more of a banana bread quality to it, but it is great as a cake. I don't know how this would turn out in a loaf pan, but it would make a great banana bread. I will definitely be making this again.

Cranberry Sauce

Wonderful! I cooked it an extra 5 minutes because cranberries were still "popping". The sauce thickened and had the consistency I was looking for after I let it sit in the refrigerator for several hours (overnight).

Oven Fried Chicken II

Very good. I added extra seasonings to both the flour and the breadcrumbs. I cooked it at the time and temp in the recipe and it was crispy and did not stick to my pan.

Tangy Slow Cooker Pork Roast

Loved it!! Made it exactly as written. Wouldn't change a thing. I pierced the roast with a fork MANY times so the flavor would soak in. Wonderful!

Easy Chicken Rice Casserole

This is a very basic recipe. My son, who doesn't like anything fancy, LOVED this. I added a little extra season salt and a sprinkle of onion powder. I will definitely be making this again.

Baked Whole Cauliflower

I thought this recipe was great. I made it as written. Some of the topping didn't stick to the sides of the full head of cauliflower like some other people mentioned, but it really didn't matter. I just left it in the bottom of the cassarole dish. When it was time to serve the veggie, I just scooped out some of the topping too. It didn't taste any different than the cauliflower baked with the topping on it.

Breaded Hamburgers

Wonderful! I made this for dinner tonight along with homemade french fries. Hint: Cut your onion slices thick so that the patties can sit on top of them without touching the water. The onions end up tasting like they are sauted.

A and Z Dip

Very easy and very good! I couldn't find "pico de gallo seasoning", so I used "salsa seasoning" instead. I found it in the area at the store where they sell other kinds of packet seasonings such as chili, meatloaf, taco, etc. I added an extra dollop of sour cream (no reason, I just felt like it), but other than that, I made the recipe as is. I served it with a variety of crackers. If you prefer, I'm sure this recipe could be lightened-up without affecting the taste by using reduced fat cream cheese and light or fat free sour cream. I will definitely make this again.

Wonderful Meatloaf

This recipe is very tasty. It was too much onion for my family, so I will reduce the onions next time, but the flavor of the meat is really good. One thing I added was that I put in a couple squirts of BBQ sauce in with the 1/2 c ketchup that goes on top. Also, it took a little longer than an hour to cook all the way through.

Southwest Chicken

Great recipe! Very tasty and easy to make! We just ate it plain this time, but next time I will make either white or Spanish rice to go with it. I think I might also try serving it by slicing the chicken up and rolling the mixture into tortillas.

Black Bean and Couscous Salad

Great recipe! I made this for a Labor Day cookout and everybody loved it. I took other's suggestions and used 1-1/2 cans of beans, 4 T. of oil and doubled the lime, vinegar and cumin for the dressing. I think this recipe would be fine using either 1 or 2 cans of beans.

Banana Bread V

Great recipe! I've made this bread twice. The first time I used 1-1/4 cups of bananas. The second time I used 1-1/2 cups. I liked it better with the 1-1/4 cups.
