Carrot Cake III
This was fantastic! I made it for my baby's 1st birthday. I used a little less sugar and cut the oil by a little bit, substituting apple sauce. Best carrot cake ever!

Spicy Bean Salsa
I followed various suggestions and used fresh tomatoes, frozen sweet corn, and substituted the garlic salt and italian dressing with my own dressing: 3/4 C olive oil, 1/2 C lime juice, some cilantro, chili powder, and salt. It was perfect!!! Can't wait to make this again.

Pumpkin Bars
I use a very similar pumpkin bar recipe and it is fantastic! I agree it's more cake-like than bar-like but it is still very moist and flavorful. The only things I do differently are with the frosting: I use 1/2 cup of butter instead of 1/4, and no milk. Rave reviews and no leftovers every time!
