This was so easy to make. And I can usually mess up rice better than anyone! I have never been able to cook it correctly. This was great though. I added some chopped cilantro, and the color was nice and the flavor was great with the coconut.

Salmon Appetizers

Very good! We literally had nothing in our refrigerator or pantry when we came home from vacation....but somehow we had these ingredients! I didn't feel like going to the store, so this was a perfect dinner for two tired people!

Simple Taco Soup

Very good! I used about 3/4 packet of ranch the second time I made it, and it was still great. (trying to save on salt wherever I can!) Thanks for sharing! Oh yeah...I also didn't have corn the second time and substituted diced canned potatoes. Still great!

Smooth Sweet Tea

Hot Shrimp Dip

We decided to make this at the beach with some leftover boiled shrimp. We made it exactly like the recipe indicated, and the flavor is fabulous! It did come out somewhat watery, but it was great. I think I might cook the onion and pepper in a skillet first next time to see if that helps. Oh yeah - I used yellow and red bell peppers instead of green, and the sweetness was great with the flavor of the shrimp and cheese.

Beer and Brown Sugar Steak Marinade
