Amish Breakfast Casserole
For several years, I have been searching for just the right breakfast casserole recipe for Christmas morning, and THIS IS IT. It was the first thing gone on the breakfast table, and they liked it so well, we made it the following morning, too!! I had to bake it a little longer than indicated - I think I had it in the oven for about 55 minutes - you can tell when it's ready (it won't jiggle in the middle). Other than that, we followed the recipe to a T and it was wonderful!

Egg and Hash Brown Pie
This is an excellent dish to prepare ahead of time & then pop in the oven for breakfast as we did on Christmas morning. There wasn't a bite of it left! I browned the hash browns before putting the casserole together, even though it didn't specifically say to do that. I think next time I may line the bottom with crispy crowns instead. It's a keeper and may well become part of a Christmas breakfast tradition. Thanks for the yummy, easy recipe!

Fruit Salad in Seconds
This is an excellent, quick fruit salad. I, too, added cool whip (1:1 ratio w/yogurt). And as others have mentioned, it doeesn't sit well for very long (it gets runny and the bananas turn). However, with that said, it was a favorite for Christmas morning breakfast, and with the red strawberries, green grapes and yellow bananas, the colors couldn't have been more festive. Thanks for the great recipe - we'll have this again, I'm sure!
