Cooking for one is something I cannot get used to, so I have stopped cooking entirely.My husband James, the person who inspired all of my cooking, died in late May in a freak accident. Alton Brown's Baked Mac 'n Cheese is my absolute favorite, followed by stuffed shells. I guess I'm a pasta-holic!

I love "winging it" with cooking and have gotten pretty good at it.

A fair amount of my baking doesn't turn out.

Spicy Rapid Roast Chicken
Did not cook in the hour the recipe claims. It took more than twice as long, and it was an average-sized Foster Farms chicken. It ended up flavorless and my home reeks of smoky-burnt-chicken-smell even several hours later.

Stuffed Mushrooms III
Decent as an appetizer. A little too much cheese; some chopped cooked spinach mixed in with the cheeses probably would have balanced it out better.

Mexican Chicken Corn Chowder
I added Mexican Oregano and used cheddar instead of jack. It was wonderful. Will definitely make again; my husband suggested adding potato next time, too!
