Tonight I made Emeril's Key Lime Pie. This was actually my first time making a pie, if you can believe it. I've made every other dessert out there, but not pie!

It was easy, but I used store-bought lime juice. The little lime I bought for the zest also had major problems and I could barely get any zest out of it... and some of the zest ended up emitting some juice onto the top of the pie, which you can see in the picture (I think it looks sorta gross).

The crust hardened up a little too much, but the taste and texture of the pie is excellent. Not authentic by any stretch of the imagination, but a quick and tasty (albeit very caloric) dessert.

Great pie! Zest is suppose to be so simple..right! I always have trouble with it..get my knuckles or to much of the white membrane. I would eat your pie or I will buy one! HEHE
