I'm a mother of a picky little eater. I LOVE to spend and have spent all day in the kitchen before just making, baking, cooking, and anything else similar. I like to see the impressions left by a wonderful bite of something magical!
My favorite things to cook
I'm getting really good at homestyle favorites. I like to try and recreate things that I've seen on a menu or had at a nice restaurant so that maybe I can just stay home for a wonderful meal.

My Mom was a casserole machine. She always called them "_____ Surprise".
My cooking triumphs
I made a great mediterranean pasta salad for my particular boyfriend this summer. I also recently made some chicken enchiladas that were my own recipe.
My cooking tragedies
I can't bake that well no matter how hard I try. If I could conquer a double or triple layer cake successfully and it be moist and wonderful that would be a triumph!

Poppy Seed Chicken
This was such a good comfort food meal for the first cool day in Norther Arkansas. I made exactly as the recipe stated except I substituted bone in chicken thighs and boned and skinned them before sauteing in evoo and s&p. After which I shredded with forks. My picky 5 year old asked for seconds! I served with white rice, steamed green beans and canned biscuits.

Almost No Fat Banana Bread
I made this with my diabetic husband in mind. Splenda sweetened applesauce, splenda instead of sugar, and two bananas. It turned out a little chewy and not as "bready" as I wanted, not sure why, but with some butter and warmed I'm sure it will be fine. I forgot to spray the pan, so it stuck like crazy, but I plan on making another batch tomorrow (have two more bananas to use up), and will maybe add a little more baking powder to see if it rises a little more. Overall, a good recipe if you are watching your weight, fat intake, or sugar. Thanks for posting.

Hot German Potato Salad III
This was awesome! I wanted to make a potato salad that I didn't have to chill. I followed the recipe as stated with a few shortcuts (pre diced onions and real bacon bits) with the exception of the omitting the sugar and substituting splenda. I will definitly make it again.
