Truck-Stop Buttermilk Pancakes

My husband has never been a fan of my pancakes so I set out on a search for a new recipe. I've tried several but they never quite lived up to expectations. I actually got great reviews from the family on this one. Definitely a keeper.

Broiled Tilapia Parmesan

I've made this recipe a couple of times. The first time, it was good but not great. This time, I seasoned the fish prior to cooking it. One complaint the first time I made it was the topping seemed to thin out too much when placed under the broiler. I followed another reviewers recommendation and added breadcrumbs to the mixture to thicken it up a little during cooking. It was great and my family loved it.

Caramelized French Toast

This is one of the best french toast recipes I've used. I boiled the water before adding to the sugar as suggested by others. I also added a little cinnamon to the egg mixture.

Goulash Supreme

I did not enjoy this recipe as is. I opted to use the tomato paste which as someone else said made it very heavy. I needed to do very serious "doctoring" in order for my husband to eat it and then it ended up tasting more like chili-mac.

Champagne Shrimp and Pasta

This recipe was excellent. I'm always looking for fabulous pasta dishes for my husband and this one fit the bill. He loved it. I only used 1/2 c of mushrooms (we're not big fans). Will definitely make this recipe again.

Angel Chicken Pasta

Excellent! I followed the recipe exactly, only I sliced the chicken breasts before baking. My husband raved about how great he thought it was. He said that it was the best chicken pasta I've ever made. I enjoyed it as well. There are defintely some strong flavors in this recipe, but they are very well matched. The only change I would make for next time would be to lightly saute' the chicken before baking it to make for a prettier presentation because the chicken has no color when served.
