Made this soup for the second time last night. Slow cooker recipes are the best and this one is definitely at the top of my list. I love how easy it is! It's also super healthy... low fat, full of fiber - which makes it super filling. We just top it with a little bit of fat free sour cream, mozzarella cheese, crushed tortilla chips, cilantro and a little avacado... Delish! Even better the next day!!!
