About this Cook
I am a busy stay at home mom of 3 kids: 10, 8 & 2. I love to cook and explore new flavors & tastes without my kids knowing anything has changed in their favorite recipes. I enjoy adding shredded zucchini to brownies, flax seed to their smoothies, adding apple sauce to muffins in place of oil/butter, etc. :) I enjoy cooking from scratch: I made my own salsa, I can my own fruits & veggies and I make my own croutons even. I love that this website gives me so many different options for exploration :)
My favorite things to cook
I love making appetizers, main dishes, breads, snack foods, and mostly desserts. We usually have dessert of some sort every night, not necessarily fattening desserts, sometimes it's a bowl of yogurt & fruit. My family and I are an active family & enjoy being outdoors, so I love foods that travel well.
My favorite family cooking traditions
My daughter loves to help me cook in the kitchen. I'm trying to get my son to have an interest in the kitchen, but he pretty much sticks to watching! :) We love to do something in the kitchen for every holiday. My kids love having heart shaped foods for Valentines, green foods for St. Patricks Day, dying Easter eggs, making Christmas cookies & candies, and carving pumpkins every year. We really spend alot of time in the kitchen together.
My cooking triumphs
I love cooking recipes and tweaking them to my own liking and then perfecting them. I guess my one cooking triumph recently was winning a blue ribbon at the County Fair for my 'tweaked' banana muffins. :)
My cooking tragedies
I really don't have any tragedies, though I've had my share of messing up recipes. One time I completely forgot to add eggs in my muffins, and I realized they turned out much better without them!! :)

Zucchini Brownies
WOW! Everyone loved these. I will make these instead of my boxed version any day, there is no zucchini taste whatsoever because it cooks down to nothing and they're soooo moist and chocolatey & delicious. Kids & hubby want these everytime, A++++

Moist Banana Muffins
These were FANTASTIC! My kids loved them and keep asking me to make them again :) The only thing I did different is I didn't add the chocolate chips, but I'm sure they would've been good w/ them. They were sooo moist and yummy, will definitely make them again!

Pudding Chocolate Chippers
I have made these twice so far. The first time I used chocolate pudding because I didn't have vanilla. They turned out tasting & looking perfect. Better than any other chocolate chip cookie I've made and I make them at least every couple weeks or so. The second time I used vanilla pudding and everyone loved them too :) HIGHLY RECOMMEND, these are so easy too. Follow exact recipe though, no substitutes like butter or anything.
