Texas Slaw
I am always asked to bring this slaw to all of our family gatherings. I have made it following the directions and have also made it with jalapeno ranch dressing instead of the regualar ranch and omitting the fresh jalapenos. Tastes great both ways!

Risotto with Sun-Dried Tomatoes and Mozzarella
Excellent risotto recipe. The flavors were wonderful. I used chicken broth instead of veg. broth and it worked fine. Make sure you have extra broth on hand if needed. Cutting back on the cheese is a good idea unless you want it very gooey. I added extra tomatoes. Risotto has a completely different texture than rice does and may seem gooey to some, especially after cheese is added, but is very delicious.

Beer Butt Chicken
My family loves this chicken. I have made it in the past by just rubbing the chicken with paprika, salt, pepper. I thought it was good that way until I added the butter. It really kept the chicken moist inside. Great for summer cookouts when there are a few people or for a crowd you can cook several.
