Chicken Stew With Coconut Milk
Made on the stove. Used peas instead of lima beans and added a bit more spice. Chop, dump in pot, simmer for about 30 min.... love it. Very tasty. We'll have it again.

Quinoa and Black Beans
Our first quinoa experience - and it was DELICIOUS. My 3-yr-old ate his whole bowl and he doesn't normally like things "mixed together". I admit that I added a couple things, but the recipe would truly be great as written... My changes: Only used 1 can beans. Added 1 chopped poblano, 1 chopped tomato, 1 TB chipotle en adobo sauce (from can), and 1/2 cup cooked chicken. Served with avocado and sour cream/yogurt mix.

Slow Cooker Pernil Pork
Used a pork loin. Did not blend ingredients - just minced the onions instead. Followed the directions except I added some ground coriander and had to use dried oregano. Cooked overnight on low. Moist, fragrant, tasty!
