Barf pasta - If I had tried to make something that smelled like barf, I couldn't have done a better job. My kids still talk about it 4 years later!!!

Beef Taco Skillet
Not a bad recipe, but it needed a lot of doctoring. I made it exactly as written, and it was incredibly easy. That's the good part. Unfortunately, it is also incredibly BLAND. I ended up adding some taco seasoning and a can of seasoned beans which made it much better. It's also too sweet because of the tomato soup. I'm not sure how to fix this - I like the texture the soup gives it, but don't want it so sweet. I'll probably make this again, but will experiment with browning my meat with taco seasoning and using one can of soup and a can of tomato puree or something like that. Maybe a spicier salsa would help, too.

Red Lentil Curry
First time I made it, I followed the recipe exactly, and it's delicious and VERY easy. I only gave it 4 stars because, even using half the curry paste and chili powder, it was still too spicy for most of my family. I used red curry paste and Indian chili powder (very different from Mexican chili powder). I love it, but it's still too spicy for my husband and all but one of my kids. 2nd time making it, I used 1/2 the curry paste and 1/8 of the chili powder. I also added a cinnamon stick and a few green cardamom pods to the onions as they were sauteeing. I served it with plain yogurt as another reviewer suggested to cut the heat. Also, I served it with a dab of cilantro/mint chutney I made a few days ago, and it is out of this world. One of my new favorites!

Indian Peanut Stew
Good recipe! I thought it sounded strange but like it had possibilities. So, on the strength of the reviews, I made it without making any changes. It was surprisingly good and incredibly easy. My whole family loved it. It would also be good with chicken added, also maybe some spinach or carrots, maybe even some golden raisins. I'll have to try it next time - the family wolfed it down, so there isn't any left to experiment with.
