Avocado Salsa
Really good. Makes a huge bowlful, but it was devoured. Everyone parked around the bowl and pretty much inhaled it. I also used roasted red bell pepper instead of raw, red onion, subbed olives w/black beans and used cilantro w/a little oregano. Served with tortilla chips.

I was surprised how flavorful and moist these skewers were. I had to replace the lemongrass with a good squeeze of fresh lemon juice and added a little garlic chili paste and marinated them overnight. I also omitted the garnishes and the Nuaoc Cham sauce. It was still delicious. Served it with Chicken Satay and Peanut Sauce and grilled asparagus over brown rice with Ume Plum Vinegar. I can't wait for lunch tomorrow.

New Red Potato Salad
I really enjoyed this. Added an extra shot of vinegar for flavor and a little more mayo. I took it out of the fridge for a 1/2 hour before serving. Everyone loved it.
