Wonderful interior texture. Good skin, but lacking a little in flavor. Try brushing with egg or butter next time and sprinkling with sea salt or herbs.

Restaurant-Style Zuppa Toscana

This is fantastic! Since my husband doesn't eat pork I used 6 strips of lox in place of the bacon. I also used baby spinach instead of Kale since that is what I had on hand. I used Anduye sausage and I was afraid it might be too spicy, but the cream cut the spice and it was perfect!

Very tasty. I tried it with the substitutions recommended by other users, and will try it as written next time. I also think the loafs would be a little bigger and look a little better if the batter was only cooked in 2 pans.

Acorn Squash Gnocchi with Parmesan Sage Beurre Blanc

This was delicious and surprisingly easy to make. I just did the gnocchi and made my own sauce. I used the Kitchen Aid to mix the dough. I took it out of the mixer once it was firm but still a little sticky, this took about 1/2 of extra flour. I used a lot of flour on the rolling board.

I used milk chocolate chips and this was delicious! It took a little while for the frosting to set, so just be sure to leave yourself a little time between frosting and serving.

Frosted Cranberries

I used blueberries instead and they were amazing! They practically melt in your mouth. I used them to top a cake and they looked beautiful as well. To make the prep clean and easy I placed the berries in a large ziplock bag. Then I poured the egg white mixture into the bag and shook everything gently. Then I poured the berries/egg whites into a strainer. Then I put the sugar in another big baggie and added the strained berries. I shook this bag gently and then poured the sugared berries back into the strainer and sifted the extra sugar out before placing the berries on a parchment lined cookie sheet.

Apricot Cookie Frosting

Tasty and pretty. It is a thin frosting almost more of a glaze, but it set nicely on top of my cake and tasted subtle and delicious.

Cassata Cake

I am not a fan of ricotta, but my family hosted a cooking competition modeled after the reality TV show "Chopped" and ricotta was one of the desert round ingredients. I followed this recipe, subbing mini chocolate chips for the shaved chocolate and replacing the chocolate glaze with an apricot glaze (another required ingredient, and a recipe that is also on this site). I also used whipped cream to frost the sides of the cake and topped the whole thing with candied blueberries (there's a recipe for candied cranberries on this site). I won the competition in large part because of this cake. And even though I'm not a ricotta fan I enjoyed the cake.

Rhubarb Crunch

As with other reviewers, I increased the rhubarb to 6 cups. (FYI, I used frozen rhubarb and it worked perfectly.) I think I could increase it even further next time. You do not need to add any more sugar to the mix. I used the full amount of better suggested in the original recipe and was extremely happy with the crunchy crust it produced. Definitely a keeper.

Very tasty (I used vanilla instead of nutmeg and I think that helped add some flavor) and very pretty. Would be delicious served with strawberries and whipped cream which is what I plan to do next time.
