About this Cook
Married to a man that will eat most anything, which is great because I am always trying new recipes.
My favorite things to cook
Meals for a large number of people (I'm used to cooking for two). And of course, dessert!
My cooking triumphs
I've had people argue over who gets the last piece of a cake I made. That was satisfying.
My cooking tragedies
I think the worst one of all was cooking fish that was salted. I didn't realize it was, so I didn't soak it in water beforehand. We considered using it to melt ice on the driveway (it was winter), but it went straight to the trash instead.

Chicken and Black Bean Casserole
I made this in a slow cooker and then used it as a filling for flour tortillas. I left off the spicy stuff and added chili pepper as needed. This was a bit liquidy, but that was to be expected since I made some modifications.

Restaurant-Style Zuppa Toscana
This is very good, but it didn't remind me too much of Zuppa Toscana at Olive Garden, maybe because I used sweet sausage. And if you want 6 servings, double the water and cream. I only got 3 servings.

Carrot Oatmeal Muffins
Very good! Skipped coconut, pineapples, and cream cheese. Should have reduced sugars when I substituted apple sauce for oil, but still very good. Didn't have the energy to shred more carrots, so only used 1.25 cups, which was plenty.
