Broccoli and Tortellini Salad

This recipe is very yummy and a balanced meal if you use torellini filled with cheese. I did not have any red onions, and used rice wine vinegar for a touch of sweet but NO SUGAR. I also used organic canadian bacon. Next time I won't use quite so many raisins. I'd give this 4 1/2 but only because it has too much sugar.

Suki's Spinach and Feta Pasta

My daughters and I needed a quick meatless recipe so we tried this one out. I put a bit too much red pepper for their taste but overall we were all pleasantly surprised. The flavor was better than I expected. We used Barilla's penne Ultra because it is whole wheat and has extra protein which is good for vegetarians. If you cook this, add more spinach then you think you need - it will cook down and you will wish you had more. In future I will add more onions and garlic, and use less tomato.

Black Bean Chicken Salad

Every time I make this I get compliments. My childen gobble it up, and we fight over the leftovers. I love the lime taste, though lemon is 'okay' if you don't have any lime. I am giving this recipe a 5 because it is easy to make, healthy, and though spicy and tasty, is universally appealing. However, I must mention that I found a couple of changes that really enhanced this meal for our family. I added 1 tsp cumin (this was the 'missing' ingredient) and half a finely chopped jalapeno as well as doubling the amount of chili. With the changes this recipe is beyond a 5 in our house!

This fits the bill for a tasty, healthy, easy recipe! I only give it four stars because there are twice as many noodles as are necessary. My family enjoyed this very much! and....I guess we're having penne with ragu tomorrow, lol!

Chicken Tortellini Soup

This recipe is healthy, easy to make, and will definitely warm you up on cold day. However, it could use a few things to liven it up a bit. Adding carrots, onions, garlic, tarragon, oregano or whatever else you'd like to add would make it a bit tastier. Using Italian tomatoes or some other sort of pre-flavored mix of tomatoes will also help. This recipe IS a keeper.

Men Love This Steak

I have a terrible habit of ruining steak so I was nervous about using this recipe. My husband was coming home from a long business trip and I wanted to bless him so I tried this one. Wow!!! It was the best meal I've made in a long time. We all loved it!!! I used feta instead of blu since none of us like blu and the feta really topped this off! I agree with the writer, Men love this Steak!

Tortellini Minestrone

Authentic Minestrone would have beans in it, but I was happy to find this soup without them. It satisfied my daughter who is not a fan of beans. I used the "fresh" (from the fridge) tortellini which was definitely better than the dry, and worth the extra cost.

Very good! I thought the water would be too much, so I initially left it out but soon realized I needed to use ALL the water. This is so much better than the canned stuff that I don't think I'm going back.

Escalloped Potato Casserole

I really liked this dish and was happy to find a hash brown casserole that has veggies included. In fact, I also added slices of tomato on the top (under the cheese) and lightly sprinkled the cheese with red pepper flakes. I put a fresh basil leaf on each tomato (also under the cheese). I only gave it four stars because it did need more spices. It is the kind of dish everyone will enjoy but can certainly be embellished.

Mediterranean Medley Salad

Easy Mashed Potato and Roasted Vegetable Enchiladas

I just want you to know that this recipe is FANTASTIC! and versatile, and a great one to make when you have a mixed group of vegetarians and carnivores. You can follow the recipe exactly and it WILL be yummy, or you can substitute almost anything for almost anything else. The last time I made this I didn't have mashed potatoes or zucchini. You can just use 2 tbs grated cheese in place of the mashed potatoes and it will still hold together okay, not as well, but okay. I used broccoli, carrots, and green peppers and was sure to put plenty of enchilada sauce and cheese over the top. EVERYONE (all six from age 12 to 46) in the family loved it!

Excellent recipe! We had this for Mother's Day and my m-i-l loved it! In fact, everyone loved it! Adding tomato slices and/or sliced mushrooms on top made it look pretty but the taste was grand even without these added touches!

Lime-Thyme Potato Wedges

Tasted pretty good, everyone ate them with no complaints. However, they took longer to cook and ended up getting a bit dry. I'd suggest using olive oil and coating all the potatoes before adding the other ingredients. Otherwise, yummy with a twist!

Raisin Broccoli Salad

THis is the BEST salad I've made in a long time! I made this for a family gathering and they ALL loved it - ages 12 to 75. The second time I made it I used balsamic vinegar instead of white and found it a tiny bit tastier. I reduced the sugar by 1/2 and found it plenty sweet enough, in fact, the subtler sweetness made it more balanced. Even without my changes this recipe is a 5 star! It will be a hit anywhere you take it. AND - don't be tempted to leave anything out every bite was perfect!

Confetti Chowder

Warm and cozy! Leftover chicken and a cold Michigan spring evening. This recipe was just what I needed tonight! I left out the squash and pimento but did everything else just as directed. I agreed with the other reviewer that it needed more flavor (hence the 4stars) so I added 1 tsp each Basil, Rosemary, Sage, Thyme and a Bay leaf. I love soup made from scratch with NO CREAM OF SOUP added. This one is healthy, colorful, and warm. The only thing I'd add if I wasn't feeding children is a bit of hot-pepper flakes. With all the additions it is 5star!
