Tom Ka Gai (Coconut Chicken Soup)

I've been craving this since having it from a Thai restaurant a couple weeks ago. I used low fat coconut milk, cut out the tumeric, used chunks of ginger that I took out after simmering, added 4 Tbl sugar, doubled cilantro, used chicken broth instead of water. Soo good! I did what someone else suggested and added lime slices while it simmered and then took them out. Next time I wouldn't do this because I think it gave it a little bit of a bitter taste. I will also add mushrooms next time like the kind I got at the restaurant.

Mexican Style Shredded Pork

This was pretty good. Although, my favorite part was the lime juice I squeezed on it at the end and that wasn't in the recipe. At with the rice in tortillas with cheese, guacamole, etc.

Chocolate Chip Cookie Dough + Cupcake = The BEST Cupcake. Ever.

Everyone loved these. I used a chocolate fudge cake mix and chocolate frosting on top. I froze the cookie dough overnight and baked the cupcakes for 18 minutes.

Rich Chocolate Frosting

This was awesome. I used half the recipe for 2 dozen cupcakes. I added less milk because I was piping the frosting on in a swirl pattern and wanted it to hold it's shape. I will be making this again!

Amazing Chicken

This was super good. I didn't measure, I just spread some mayo on (just enough to barely cover) and dipped it in the bread crumbs. I did add some dry ranch powder to the bread crumbs like someone suggested. I was scraping the pan clean when it was done.

Mexican Bean Salad

Really, really good. A friend of ours has brought this to a few social events and I'm always excited when I see it. Today I finally made it myself. Despite the super long list of ingredients it's really easy.

Sesame Pasta Chicken Salad

I've been wanting to try this for a long time because it sounded like something I would like. I made it for a picnic and everyone loved it. The cilantro seemed a little weird, but it was great. I did chicken cubes instead of shredded and added a chopped red pepper. I wasn't paying attention to the directions and just added the sesame seeds to the dressing without toasting. It will probable be even better with that step next time.

Slow Cooker Italian Beef for Sandwiches

Really, really good! I followed others' advice and used two packets of Italian, beef broth instead of water, and let the shredded beef soak for 1/2 hour before serving.

No Bake Cookies III

With my old no bake cookie recipe it was hit and miss whether they turned out well. These are perfect every time. The key really is in boiling them for the right amount of time.

Spicy Garlic Lime Chicken

My husband loves garlic and I love lime so this was perfect. I took the advice of other reviewers and doubled the sauce. If I hadn't there definitely wouldn't have been enough.

Chocolate Chocolate Chip Cookies I

Chicken and Broccoli Braid

I used canned chicken, frozen broccoli and basil instead of dill. I also left out the red pepper, almonds, and onion because I didn't have any. I'm sure it would be even better if you follow the recipe! This was easy but looks fancy and tastes really good.

Italian Bread Bowls

I was a little bit nervous because I had never made bread bowls before. When I finished mixing it in my KitchenAid it was a crumby mess, but after kneading it for 10 minutes it was great. I made 6 bowls with it.

Hot German Potato Salad III

A friend brought this to a potluck baby shower and I had to get the recipe so that I could have more! I just used real bacon bits and sauteed them with the onions. I probably added more like 1/2 cup vinegar since I love vinegar so much!

Apple Orchard Punch

Butternut Squash Soup

I've been wanting to try this one forever! I baked two squash (cut into quarters) at 400 for 45 minutes. Way easier than trying to peel those monsters. I only used 4 oz cream cheese and thought it was perfect. My regular blender is broken so I just pureed it right in the pot with a hand blender and it was so easy!
