Chicken and Corn Chili

This was a lovely change to the usual chili. I used Ol Del Paso salsa (mild) and just used regular corn (hubby doesn't really like corn in the first place, so I didn't want to go TOO weird with a first-time recipe). I also added a can of diced tomatoes and glad I did because I think the salsa would have been too overpowering on it's own. We both enjoyed this recipe - Only change next time would be to add some some tomatoe paste as well as hubby and I found it a bit too watery. But excellent change and a bit healthier too from regular beef chili!

Healthy Turkey Loaf

This is an awesome recipe. A great substitute for beef meatloaf. We omit the peppers and just and a bit more salsa and throw in some onion and garlic powder for taste. We also mix some ketchup and regular BBQ sauce together and put it on top of the loaf before cooking. And some tang and flavour to it!

Pumpkin Bread IV

This is delicious. I just cut it down to a 2-loaf recipe. Also had to let it cook for about an hour. I didn't have any apple sauce, so had to use the oil, but will substitute it next time for sure! Great recipe, tastes like pumpkin pie! They were gone in a second at home and work!

E-Z Drop Biscuits

These biscuits are perfect! I omitted the cream of tartar. I mixed the butter and milk together and added them both into the flour mix. I added the milk/butter mix a bit at a time and found that I got a good consistancy when there was still about 1/3 of a cup left, so I did not use the rest. May only use 3/4 of a cup of milk the next time. I made larger biscuits (got 7 out of the recipe...LOL), so they took about 20 minutes to cook instead of the regular time. These were perfect and went great with stew! But they also would taste great on their own with some butter! A keeper!

Slow Cooker Beef Stew I

My husband is a picky eater and I did not have all the ingredients on hand, so here are the changes I made: 1 tsp of garlic powder (replacing minced garlic), no bay leaf, 1 tsp onion powder (replacing chopped onion) 2 cans beef broth (added a can of water as well, this helped make more base to the sauce), added about 1 cup baby carrots (replacing diced carrots), omitted celery, and added about 1 tsp or so of pepper. These are just my personal changes, but the stew would be just as as good as the orginal recipe. I made this at about 8 o'clock the night before...Our slow cooker has 3 settings - 'Keep Warm', 'Low' and 'High'. 'Low' is usually too high, so I turned it on 'Keep Warm' until about 7AM. I found that the stew was not thickening up well and the beef was still pink, so I added about 1/3 cup Veloutine and turned it up to 'Low' and just prayed it wouldn't burn! We turned it down to 'Keep Warm' again at 3PM and by dinner time it was absolutely perfect! Two men and myself ate almost the whole pot (we all went back for seconds)!!! Definately a keeper, 5 stars!!! Great with biscuits!

Sophie's Zucchini Bread

This is a lovely bread. Very moist and dense. The cinnamon really gives it something special. Put a little butter/margarine on top of a slice and it's wonderful. I used 1/2 white 1/2 brown sugar as suggested. I only had about about 3/4 of zucchini to shred, so you really couldn't taste it, but I will be sure to add more next time. *NOTE*My brother hates zucchini bread. He tried a slice without knowing what it was and loved it! I never told him what it was! :P

Marshmallow Fondant

This did not turn out well for me at all. I kneaded the dough, adding lots of icing sugar, but it still remained sticky and even did not work after refridgerating. Maybe I did something wrong - I also found Crisco helped with handling, but overall I could not get it to work unfortunately :( I won't use again, all it made was a mess!

Easy One Skillet Stroganoff

This was really good! Things I changed: I used ground turkey and omitted the oil and mushrooms. I cooked the ground turkey and onions together until the turkey was cooked and then added the vegetable broth, egg noodles and garlic powder. I let it sit for about 10 minutes (or until the noodles were cooked enough) and added the sour cream and parsley. I only added about 3/4 of the container of sour cream at the most because hubby is not a fan of it. But we both thought it was great! Very easy and quick to make :)

Slow Cooker Chicken Cacciatore

The first time I made this, I burned it! I put the slow cooker on 'Low' and I knew it was strong, but Wow! We tried to eat it and just could not get passed the burnt flavour... I tried the recipe again and made a few changes - I cubed the chicken, only used 1/2 a bell pepper, used whole canned mushrooms and substitued the onion with a sprinkle of onion powder and the garlic with a sprinkle of garlic powder. AND I put the slow cooker on 'Keep Warm' this time and it came out perfect :) These were all personal substitutes for either foods my husband didn't like added, or just our personal preferences when cooking. It turned out wonderful and I grated some cheddar cheese for on top and that worked out well. One thing I would have changed - I used a jar of Ragu for the sauce base and I think I will use another brand like Hunt's or something. Ragu tends to be a thinner sauce and I would have liked it a bit thicker. So next time I will use a thicker spaghetti sauce and just add little water if necessary. Great, simple recipe for the slow cooker! And wonderful with angel hair pasta!

To Die For Blueberry Muffins

These were as I expected them to be for the amount of ingredients used in the recipe. It's a very basic, easy blueberry muffine recipe which is what I was looking for. Not too sweet and a good texture. Changes I made: Instead of adding the wet ingredient to the dry, I did the opposite. I find it easier to do this when mixing by hand. I found the batter became way too thick (I don't know if it was because I added the dry to wet ingredients instead, not sure), but I ended up adding some milk to thin out the batter a bit. It still turned out fine, but maybe lost a bit of sweetness, so I may add a little more sugar to compesate next time. I only had frozen blueberries, so I let them thaw a little while I was making the batter and they tasted just fine!

Fluffy Pancakes

Great pancakes! Really tasted like buttermilk and were easy to make. Added a hint of vanilla to the wet mixture before adding the dry was all that I did different. Batter is very thick, but I like it that way. I got six 4'' pancakes out of the recipe and it was enough for hubby, who I was only making them for. He said it's a keeper :)

Vegan Chocolate Cake

This is a wonderful recipe! I made cupcakes and the recipe was able to yeild 12 with the cups being filled about 3/4 of the way. I did as another suggested and added 1/2 cup cocoa instead of 1/4. Besides that, the only other adjustment I made was that I mixed the dry and wet ingredients in separate bowls, then added the dry in with the wet. Just foud it easier to mix that way. These cupcakes came out with a perfect texture and taste. Good for a chocolate craving! I made them for a Vegan couple that was coming for dinner and this was a perfect dessert to serve, they loved them! I will keep this as my chocolate cake recipe I use from now on!

Sloppy Joes II

I love this recipe! It has a lovely, sweet/tangy flavour. My husband does not like onion or green peppers, so I skipped the peppers and added 1/2 tsp onion powder to the sauce instead. For the sauce, I did added 1/2 cup ketchup and 1/4 cup BBQ sauce as some suggested. Although the recipe yeilds 6 servings, we had 4 people eating and small buns. We were able to get 6 servings, but they were not piled, generous servings, so seconds were not available for everyone. I will double it next time for feeding more than 3 people. Excellent recipe! Never buying the canned stuff again!

Lemon Pound Cake III

This is a lovely recipe! I did not have any butter flavoured shortening, so I just used butter and it turned out fine. I added a tad more lemon extract also then what was called for. I halved the recipe and put it in a bundt pan instead of a tube pan. The glaze I used consisted of melted butter, confectioner's sugar, milk and lemon extract. Will definately make again!

Honey Roasted Red Potatoes

I was impressed by these. Changes I made: - Substituted onions for 2 tsp onion powder, which was put right into honey mixture - Cut potatoes into eighths instead of quarters (used medium to large potatoes and maybe not quite a pound) - Cooked for 45 minutes, instead of 35 and they came out perfect -Covered with tin foil...I don't think the recipe mentions that, maybe it's just implied? They had a lovely, different flavour that I enjoyed and I will keep this recipe!

Cheesy Italian Tortellini

I found this recipe to be very 'tomatoey'. It was not what I was expecting. I think a lot of the flavour is expected to come out of the Italian-style diced tomatoes, and it really isn't strong enough to give it enough flavour. The addition of the sausage was sort of awkward to us, although I'm sure it is supposed to add to the flavour as well. It was nice for something different, but I did not keep this one in my recipe book.

Irish Soda Bread I

My family and I loved this recipe! It is the perfect texture and sweetness. I halved the recipe to one loaf when I made it the first time and just added 2 eggs insted of the 1 1/2. Next time I will make 2 loaves and make one with raisins and one either plain or with chocolate chips!
