Applesauce French Toast

I used a little more applesauce (1/3 c.) and a little less milk (2/3) and 1 T. brown sugar instead of the white. Used slipper cibotta bread cut thick (1"). It made 8 pieces. Everything else was the same. I cooked it on an electric griddle at 350. Served it with applesauce on the side and warm maple syrup. Powdered sugar and a fruit syrup would be really good with this, too.

Spicy Spaghetti Squash

I skipped the step of cutting it in half. I pierced it with a knife all over and nuked it for 10 minutes, not covering it and no water. Came out perfectly. I used leftover ground lamb and pork tenderloin for the meat. Used a 29 oz. can of the crushed tomatoes and omitted the wine and capers. The thickness of the sauce was just right. We put freshly grated Romano on it as a great finish. This was very tasty and also a very attractive dish. I am going to add cubed eggplant to it for the leftovers. If served alone, this was enough for 2 of us to eat for one meal and enough for a 2nd meal as leftovers.

Chicken Breasts with Balsamic Vinegar and Garlic

Used boneless chicken breast filets. I didn't realize we were out of Balsamic vinegar so I had to sub Tarragon. It was just wonderful! We omitted the butter at the end but thickened with flour/water. I agree with the previous reviewer about making more sauce and putting it over pasta next time. Chicken was very tender and melt-in-your-mouth good. Thanks!

The Best Bean and Ham Soup

This really lives up to its name, "The BEST". Very, very tasty. We need to keep referring people to the cook who submitted this recipe's "real" directions on 3/24/08. I could only cook it about 6 hours the first day. I used a 1# bag of baby carrots and 4 tomatoes. For the 7 c. chicken broth, I used 1 1/2 T. ham base for 4 c. Added the additional 3 c. and 1 1/8 T. ham base the next day when it cooked for a few more hours. I don't think anything was lost having to do it this way in case plans to cook it all in one day change for you, too. And the day after, it was just as good, if not better. Thank you!

Vicki's Hush Puppies

Instead of self-rising flour and self-rising cornmeal, per others, I just added 3 t. (1 T.) of baking powder. It admittedly was on the sweeter side and I know that isn't the traditional Southern style but if you like cornbread that way, you'll like this. It's not for everyone's taste but it was for ours. Thanks!

Beer Batter Fish Made Great

We have a favorite Irish pub that just has the lightest beer battered fish that we just crave. Now we know how they do it! The hub made it and did coat the filets with flour first. He thought next time he'd add a little flour to the batter, also. I think it just "felt" wrong to him with it being so thin but the finished product says, "Don't do it!" He cut the salt down to 1 t. per other reviews. It was then pan fried it Smart Balance. SO delicate and delicious! Thank you very much!

Byrdhouse Marinated Tomatoes and Mushrooms

This was just wonderful! Used tomatoes from the garden and I know there was more than what was called for so I did double the dressing. Not necessary! We had to pour some of it off. Very, very tasty. Thank you!

Green Chili Casserole

This was a very nice, moist egg dish. I made it in an 8x8" dish. We roasted two Hatch chilis for it as this batch was particularly hot even for our tastes. I used 1/8 t. salt and pepper, 1/2 t. garlic powder, 1/8 c. Hormel real bacon bits and doubled the cheese. I baked it for 30 min. and it was done perfectly to our liking. Thanks!

Lemon Mustard Chicken

Used two lemons and 6 limes to = 3/4 c. Doubled all spices except salt. Marinated in bag 3-4 hrs. Used no butter but instead sprayed baking dish. Was not soggy. Like someone else, boiled the rest of the marinated then I thickened it with remaining breadcrumbs then added apple cider to create the right consistency. The next time I made it, just boiled the marinade only and poured it over the chicken. It was equally as good. I did have to bake it an additional 15 minutes after turning, for a total of 45 minutes after turned.

Lasagna Alfredo Roll Ups

When I made Lasagne last time, I knew I wanted to try this recipe, so I cooked the extra lasagne noodles and froze them to see if this part could be done ahead. They froze/defrosted perfectly. I made the recipe exactly as written. I, too, would like to use my own sauce next time "just because". However, this was just wonderful, super simple but looks very elegant and like you slaved over making them. I'll add a little parsley in the top sauce for color next time. Great keeper! Thank you.

Cowboy Caviar

Very, very tasty! Omitted the cilantro (personal taste). Easy recipe that gets better as it sits. We had some leftover spaghetti noodles that we sliced up a bit and threw in the following day. It was fantastic! I thought I had Zesty or Robusto Italian dressing but didn't. I would've used that instead of straight Italian but it wasn't even missed. It was quite "robusto" enough on its own. Thank you!

Easy Batter Fruit Cobbler

Easy Pickled Beets

We used fresh beets and green onions from the garden, cooking the beets for a few minutes until sharp knife-tip tender. We doubled the recipe for the amount of beets we had but only used 2 c. sugar still and 1 1/2 t. salt. The cinnamon was the perfect touch! These would go nicely as a side with pork. Thank you!

Pineapple Cheese Casserole

We had this at a potluck and just LOVED it! I sought out the person who brought it and she gave me the recipe. She lowered the sugar to 3/4 c. It was perfect. I can't rave enough about it. I never would've paired cheddar cheese with pineapple but it is out of this world and so easy!

Chicken Enchiladas II

MADE THE CHANGES BELOW!!! These were WONDERFUL! Hub couldn't say enough about them. The only change I made from reading the reviews was that since we like a lot of flavor, I added 1/2 t. cayenne pepper and 1/2 t. cumin to the sauce before dividing it. No more/no less for our tastes. I did only make 3 enchiladas. As others suggested, to make 6, double the filling. This is one of those forever keepers. These are better than any restaurant we've gone to and we've been to some truly fantastic ones ($$$). Thanks so much!

Green Chili Stew

This had just the BEST flavor. Had to change the recipe a bit for what we had on hand. We had whole pig on the spit to use up. We are true pork lovers so I think I'll always make it with pork but when the "real pig" runs out, maybe I'll add some liquid smoke to store-bought. I live where there is lots of Green Chili Stew around and definitely eaten my share. This is absolutely the best. The flavor just rules! Thank you!

Irish Cream Bundt Cake

I read quite a few reviews and went with the chocolate cake mix and vanilla pudding. Used an infuser to get right into the cake with the glaze. There were only 3 people eating it and it was half gone in a day. Great recipe! Thanks!

Seasoned Fan Potatoes

These would make wonderful company potatoes because of the nice presentation. We ran to the hardware store and got 2 small wooden dowel rods and cut the potatoes between them. I loved another reviewer's thoughts on adding rosemary. I think I'll rub them with oil and rosemary next time and fresh ground pepper. Great recipe! Thanks!
