Lima Bean Bake
It was O.K., but I'm not sure I'll make it again. It did help me use up some more of my fresh lima beans, though! I wasn't sure if this dish was supposed to stand on its own or not. I served it over rice to give it a little more texture. Otherwise, my batch would have resembled chili. I also made it with the Boca Crumbles, vegetarian style.

Egg Casserole
This was pretty yummy! We're a vegetarian family, so I substituted the meat with Gimme Lean ground veggie sausage. I cut the recipe down to 4 servings and it was just right. I cooked it for 15 minutes covered and then another 15 uncovered. I'll make it again!

Asparagus Angel Hair Pasta
Yummy! Even my two-year-old kids loved it. I didn't have angel hair, so I used rotini instead. I followed the rest of the recipe exactly and it turned out great!
