White Chocolate and Cranberry Cookies

VERY good cookie. Easy to make. Lots of variety can be incorporated!!!! I added more chips and cranberries and also tossed in some sliced almonds. Be careful NOT to overbake these, take them out and allow to finish cooking a min or two on the cookie sheet. These were moist and very flavorful. They are sweet...but not overly that you could not eat them. I recommend this recipe!

Too Much Chocolate Cake

Good cake, easy to make. Topped this with the Satiny Chocolate Glaze and it made a wonderful dessert. I recommend a bundt or star bundt pan...it looks really nice!

Country Banana Bread

Yummy! Super easy and very good! I added more bananas (5, I think) because I had that many. Topped this with the Cream Cheese frosting and everyone raved and asked for the recipe. A keeper!

Satiny Chocolate Glaze

DIVINE! Super easy, super tasty, very impressive! I will say that ONE batch in plenty of glaze for a bundt pan size cake, I doubled this the first time based on reviews and ended up with WAY too much frosting for my cake. The second time I did a single batch and it was plenty. You could use this on pretty much anything...cake, cupcakes, cookies, etc. Good recipe!

Easy Lemon Cookies

Didn't really care for these. After reading the reviews, I opted to use fresh lemon juice and some rind in place of the lemon extract but I still did not find the flavor appealing. I really expected a better cookie. I won't make these again.

Popularity Cookies

SO SO YUMMY! These are super easy to make. I think it took me 20 mins start to finish and that included washing the pot! didn't change anything but only had dark chocolate chips on hand so used those...turned out great! I also only chilled mine for 2 hours in the fridge and they were hard enough to break apart and begin the eating frenzy!!! My hubby says they taste like Almond Roca and I think they taste like a Heath Bar. Easy to have all ingredients on hand which is nice. Will make again...and again.

BAKER'S Peanut Butter Oatmeal Chocolate Chunk Cookies

Just made these with my kids...ate one warm out of the oven...delish! I used regular chocolate chips because that's what I had on hand...didn't change anything else...but did under bake them a bit (a min or two) because I don't like crunchy cookies...I prefer them to be soft and chewy.

Chocolate Eclair Dessert

This is an easy and very good dessert. I've made it many times playing around with different options and I've found the following to work best for my family: I make it at least 1 day ahead (or 2 if there is time!), I use the chocolate icing reciped that many reviewers use (cocoa, butter, sugar, vanilla and milk) but I DOUBLE the frosting recipe to make a nice layer of fudgy topping. Make sure you do NOT allow the frosting to cool too long because it becomes very difficult to spread if it gets too cool - a bit warmer than room temp is the best so that it drizzles out of the pot into the dessert. You will need AT LEAST 3 packages of graham crackers, if making a 9X13 pan. And you can use vanilla or banana pudding...both taste yummy!

Cheesy Ham and Hash Brown Casserole

This went over well for a brunch but I made lots of changes after reading the reviews. First I used O'brien potatoes cubed not shredded, added more spices (garlic and onion powder, paprika and pepper) and quickly browned the hash browns prior to adding them into the casserole mixture. I think this helped the texture and prevented them from becoming mushy after cooking. I substituted cream of mushroom with garlic for one can of the cream of potato (still used one can of the cream of potato, too). I used one large Ham Steak and I browned it well, cubed it into pieces and added to the mix. I used less cheese than stated and once the casserole was almost done, I added a bit more cheese and some french fried onions to the top of the dish and allowed to melt and brown a bit. Every loved it, it was flavorful and the texture was nice without being mushy. While my changes did add a bit of prep time, it was worth it for the final result.

Greek Pasta Salad I

Very good recipe. I made the following changes: added marinated artichoke hearts (quartered), a bit of fresh lemon juice to the olive oil and red wine vinegar dressing, used FRESH oregano and basil, extra feta (lemon, basil flavored) and tri-colored rotini pasta. Made it the night before and allowed to blend over night. Everyone at the picnic seemed to enjoy it. Good basic recipe that you could easily adapt to taste and preference.

Cheese Ring

I've made this recipe a few times now and think it's great! I did make the following adjustments: Add 1 block of cream cheese (I whip a room temperature block in the bowl prior to adding any other ingredients), in addition to cayenne and garlic salt, I also added onion powder, paprika and garlic powder (about 1/2 tsp of each. I mix the seasoning into the cream cheese before adding the remaining ingredients). I use a combination of sharp and mild cheddar cheeses (50/50 of each) and I make this dip the night before to allow the flavors to blend. I also recommend using a 8" springform pan (lined and sprayed with butter flavored Pam) instead of the jello ring. Once the dip is turned out on a plate, top with raspberry preserves, chopped pecans and fresh raspberries. It tastes great and looks fantastic! By using a springform pan, you can get the dip and preserves in each bit...which is really yummy. This is very simple to make and tastes great!

Eggplant -- Easy, Good and Tasty

Just made this for dinner...and LOVED it! Very simple and tasty! I added balsamic vinegar to the eggs instead of water, used diced cherry tomatoes mixed with balsamic vinegarette salad dressing and grated romano cheese as the topping. I cut my eggplant rounds about 1/2 inch thick and baked for 20 mins. Came out perfect. These were a hit and would also make a great appetizer! YUM!

Spinach Quiche

I decided to make this on a whim...and didn't have all the called for ingredients but it still turned out GREAT! I used the eggs, milk, spinach, onions, garlic and butter. Added 7 sliced of precooked turkey bacon (diced) and diced red bellpepper (sauteed with the onions and garlic). Then I just mixed everything together into one bowl tossed in a couple of handfuls of grated cheese, mixed well and poured into my pre-baked pie shell (I pre-baked it for 5 mins). I cooked uncovered for 15 mins then tented some foil lightly over the top of the pie until the last 5 mins - removed to allow the top to brown jut a bit more and it came out perfect! My friend asked if I bought it! This is a great recipe for whatever you have on hand. A keeper for sure!

Super Duper Chocolate Cookies

WONDERFUL! Made these for a party and they were the first to go (and there were lots of other cookies there!) I followed exact but added a bit more flour because some people mentioned they spread, mine did not at all! The key to this recipe is to make sure your dough is COLD when rolling (chill at least 3 hours) and do not OVERCOOK. I only baked mine for 12 mins (and my cookies were big - I only got 3 doz out of this recipe) then allow to cool on the cookie sheet for 5-10 mins then remove to cooling rack until completely set. They may not look completely done when you take them out but if you overbake these they will be so dry and awful. And my kids had a ball rolling in the powdered sugar...so this is a keeper!

Microwave Oven Peanut Brittle

Fabulous and EASY...how can you beat that? I followed the directions to a "T" and it turned out wonderful. It was my first time making candy of any sort and I could not believe how easy it was! I do recommend using a glass batter bowl (one with a handle) to help pour the candy out of the bowl once finished. I also lined my baking sheet with foil and lightly sprayed with butter flavored Pam, made clean up a breeze. This is so simple, I'll be making it as christmas treats for friends and neighbors!

Herbed Beef Rib Roast

Good recipe! I did make the following changes: i made 6 slits into the roast and stufted one whole garlic clove into each slit. I used the seasoning mixture, adding some Italian seasoning (I think I doubled the amount) and rubbed the entire roast. I let this sit overnight to marinate. Before cooking I quartered 2 onions and mixed 1/4 cup beef broth and 1/4 cup red wine (omitting the water) and put everything (onions, broth mixture and meat) into a roasting pan. Baked until meat thermometer read rare and then let sit for 30 mins which resulted in perfectly roasted med rare roast. Flavor was very good, recipe easy to have ingredients on hand, will definately make again!

Smushed Apples and Sweet Potatoes

Butternut Squash Soup

Spicy Rapid Roast Chicken

VERY GOOD! After reading other reviews, I made the following changes: doubled the spice measurements, stuffed the chicken cavity with onion, garlic cloves and fresh rosemary. I rubbed the spice mixture under the skin and over it. It did take an extra 10 mins to bake at the recommended tempurature. But excellent - everyone loved it. It's a keeper!
