Bacon Wrapped Smokies

Yum! Definitely shake up the smokies with the bacon slices in the brown sugar first. Then roll and still sprinkle on more sugar! Baked on rack for 30 mins @ 400 -- good thing my pan was lined with foil, or it'd be headed for the trash right now! ( : Haven't tried keeping them in the crock yet, but will do that for Christmas munchies. Loved it!

Sausage-Filled Stars

Try using a shot glass to push the wrappers down into the mini muffin cups - works great! (spray w/ Pam -- don't use the oil; too many calories and not necessary). I prefer to bake them IN the muffin tin (removing them to a baking sheet makes them harder to handle & creates more dirty dishes); just remove to a rack to cool. Try adding about 1/4c prepared (homemade) ranch dressing rather than the dry mix, gives a bit of extra moisture and its easier to control the salt content. Lots of great tweaking potential. MMM!

Christmas Breakfast Sausage Casserole

YUM! I split the recipe into 2 pie plates; 1 w/4 slices toasted white bread; 1 w/cheese/garlic croutons. Both are good, but the crouton version is better. Used 10 eggs and full amount of milk;also whisked 1 packet of country gravy mix into the milk before whisking into the eggs. added green onion to both versions; green chiles to one of them. Baked per orig directions. I really don't think you can mess this up! Can't wait to try one with bacon and mushroom. Yumyumyum!! This is the PERFECT solution for any Holiday morning!! Thanks for posting!

Chili I

Hubby that doesn't like chili thought this was great! I love chili, and thought it was just OK. Used a combo of pintos and white beans (we don’t like kidney). Needed more seasonings.

Bacon Chicken and Dumplings

Great idea with the Bacon! but the broth came out strange, almost like chix broth w/curdles in it, just didn't quite come together for me. I agree w/prev reviews that corn doesn't really belong, but celery and carrots DO; also I don't think the milk or 1/2 & 1/2 is needed, because the dumplings normally break down enough to thicken the broth. This would eliminate the "curdling" problem. Also - needs tons more seasoning!!! (garlic, onion, parsley, celery salt, etc.) It's very bland as written. but -- love the bacon! Thanks for THAT! ( :

Bierock Casserole

We did 2/3 ground beef and 1/3 spicy brkfst sausage; added diced green pepper & celery along with kraut and simmered until soft; seasoned meat with garlic powder, lemon pepper, black pepper, caraway seed & a splash of worchestershire sauce; stirred in cheddar/jack & mozzerella cheeses (about 1-1/2x the recipe amt). Baked bottom crust first, just til getting golden, and stirred in a bit of 1000 island dressing just before adding meat to casserole dish. Topped w/butter flake crescents (on hand) and sprinkled with grated parmesan cheese - then baked as directed. Hubby - who hates saurkraut - loved it!

Country Breakfast Casserole

Excellent! Used Spicy JimmyDean sausage, a mixture of cheddar/jack and pepper jack cheeses to spice it up a bit (we love spice!). Made the original version with bread on top, sprinkled w/salt, pepper & paprika, and drizzled with butter. The bread baked up light, crispy and a beautiful golden brown. Loved it!! Thanks Kristin!***Follow-up note***: If you're going to want to re-heat leftovers, you may want to go with the hashbrowns on top. The bread became soggy and reminded me more of stuffing than a breakfast dish.

Asian Salad

Yum! 1/3 c evoo + 1 T Sesame Oil; rice vinegar; oven toasted all the crunchies w/butter Pam 350 - 8 mins; add the chicken ramen pack to the dressing (all per others' reviews - thanks!); also add shredded carrots. It's 105 today and this is a GREAT summer cooldown treat! Can't wait to try again & add some shredded chicken. Thanks for the post!

Coconut Shrimp I

OH YEAH!!! Awesome. These shrimp are perfect! We tried the orange marmalade/ mustard/horseradish thing and couldn't come up with just the right taste. Wound up using a spicy asian chili sauce instead. Need to find a better dipping sauce, but the shrimp?! -- PERFECT!

Garlic Cheese Biscuits

Really easy -- but I think a homemade dough would be worth the trouble. The bisquick was a little too sweet for our tastes; almost seemed to clash with the garlic. Added extra cheese and even with that, it pretty much disappeared into the mix and didn't leave a cheesy enough flavor.

Chicken Enchilada Soup III

Use the prev review'rs tip about whisking the masa in just a bit at a time (thank you!)...then add rotel (it needs it) plus a little salsa (a fresh cut salsa w/cilantro worked great); add xtra on the spices and voila! I'm at Chili's!! ( : Thank you!!

Enchiladas

Used flour tort's & white onion (on hand),added garlic and 1 sm can diced chiles (AND jalap's) to the meat; 1/2 yogurt 1/2 sour cream and cheddar & jack w/soup for cheese sauce. Easy, decent "family" food; wouldn't serve to guests.

IT'S A POPPER IN A DIP FOR SURE! GO W/OTHERS' SUG'NS FOR 1/2 MAYO 1/2 SOUR CREAM; ADD EXTRA JALLY'S & A TOUCH OF THEIR JUICE; SUB IN A LITTLE CHEDDAR FOR SOME OF THE PARM. STIR IN MOST OF THE CHEESE, BUT LEAVE A LITTLE OUT TO SPRINKLE ON TOP; THEN DUST W/BREAD CRUMBS; SPRAY W/BUTTER PAM; BAKE 375 20 MIN. AWESOME. THANKS FOR AN EASY GREAT ONE!

Sassy Chicken Enchilada Dip

Add some chopped jalapenos & a little of their juice, threw in some mexi cheese, then baked. Not great looking, but DOES taste great! Made 1/2 recipe just for me, planning to use leftovers in quesadillas as some others have suggested.

Buffalo Chicken Dip

DO NOT USE CANNED CHICKEN!! I did, only to give it a fair shot as written -- BIG mistake. I almost decided to toss it before I even baked it (imagine TUNA w/Frank's Wing Sauce -- eeeyooou!)-- but I went ahead & baked it (in the layered format) just to see....GLAD I DID -- cuz I will DEFINITELY do this again with fresh chicken breast that I saute/shred w/the Frank's. Even with the quasi-tuna thing going on from the canned chix, it's not half bad. With fresh chicken, I'm sure it's a keeper.

Chicken Enchiladas II

Use cream of chicken instead; and a can of green enchilada sauce; no milk; some fresh cilantro. Good with either the flour tortillas as written OR white corn. We like a cheddar/jack blend -- heavier on the jack in this. Very rich; very good.

Taco Soup II

3 stars for EASY -- but didn't produce the flavor that the title would imply...Not a bad combination of ingredients, just NOT very taco-flavored, and I even added more cumin, mexican oregano, etc. I think the ranch dressing mix toned down the taco taste and added a LOT of sodium this could really do without. Thanks anyway!

Creole Seasoning Blend

Awesome! Used this in "Bubba's Jambalaya" on this site. Soooooo good! Much MUCH better than store-bought as you can control the salt content. I put in only about 2/3 of what is called for so, depending on how I'm going to use it, it still leaves room for addl. salt if needed, but doesn't overdo it in recipes that are already really high in sodium. Love it! Thanks Josyln!
