Apple Cole Slaw

Off the charts good! I fed 200 people this slaw recently and everyone was floored at how amazing it is - and it's really so very easy! The dressing makes it! I will say, though, that I will only dress this slaw the same day I'm serving it. I didn't care for it the day after. A+ recipe!!

Cranberry Orange Loaf

I just found and made this recipe today after reading through some others. This was so great! I used sliced almonds in place of the pecans because that's what I had on and - and had to use butter in place of the margarine. Otherwise everything was the same. Oh, and I cut my cranberries in half, which I think was worth the time. I baked it in a bread bowl baker, which I probably won't do again (it baked a little uneven), but it's still SO good! I did do the orange glaze - 1 cup of powdered sugar with a splash of OJ and a drop of vanilla. I glazed it once immediately out of the oven and once about an hour later. YUMM-O!

Grandmother's Buttermilk Cornbread

The search is O.V.E.R. These are really great! I added 1/2 can of drained whole kernel corn and got exactly 12 perfect muffins! Baked at 400 for 20 minutes - golden goodness!! Thanks so much for the great recipe!!

Sturdy Whipped Cream Frosting

I try so very hard to not give low ratings. :-( This turned out just awful for me! Like others, my frosting is not stable at all - not even close! I think if I'd have whipped it any more, it might have turned to butter - it got to stiff peaks - but after it sits for literally 30 seconds, it's soft and won't hold its shape again. I started with ice cold cream - had it in the freezer for 20 minutes before I began - and ice cold bowl and beaters. Room temperature cream cheese. The flavor is alright, but really quite bitter for some reason. New cream cheese, new cream. IF I were to make this again, which I just can't imagine doing, I'd add at least a cup of powdered sugar to the finished frosting to help give it some body; otherwise, I have cupcakes literally dripping with frosting. I honestly don't even think it would do well on a sheet cake. :-( I have no clue how those who took pictures of this frosting actually have any height...

Caramel Apple Dip

This stuff is SINFUL! So so good and so easy! I used a couple of heaping spoonfuls of caramel ice cream topping in place of melting the caramels - added to the easy factor - and I could eat the whole bowl myself. Mmmmm. Thanks for the great recipe!

Ashley's Chocolate Chip Cookies

These are alright. I'm still in search of a go-to CCC recipe that never fails. This one, for me, has too too much brown sugar. It just made the chocolate taste odd or something. I am absolutely going to try again, because I love when young cooks have great recipes, but I might work on the quantity of brown sugar a tad...or use something in place of chocolate chips. Hmmm. Baked French Toast

This really smells good in the oven. That's about the best I can say about it. :-( I decided I better do a test run of this recipe before using it on Christmas morning since there are so many mixed reviews. I would have been so disappointed if I made this for my guests and it was this bad! I'm really glad I listened to the reviews and used less liquid - this would have been a disaster if I'd have used all of that liquid! There really is hardly any flavor at all and it's not even pretty to look at! My mom and I each had one piece and the rest went in the trash. A big ugly soggy mess. :-(

Buttery Soft Pretzels

I just pulled my first batch out of the oven! YUMM-O! There were a couple of things I wish I'd have paid more attention to. First, my dough didn't double...not even close. I'm sure I either have old yeast or I killed it with water that was too hot...but I went ahead and used it anyway. Second, while I *meant* to cut the dough into 12, I blanked for a bit and cut it into 8 instead. No biggie. The baking soda/water worked great. Into the oven. I baked at 400 for 10 minutes and I'm glad I did! The bottoms are over-brown and the tops got brown really really fast. I wish I could have left them in the oven another minute or two, but the bottoms would have been black! The flavor, however, is SO GOOD! Really dense (that's why I wish I could have baked them longer). Next time, I may lower the oven temperature even further, and bake them on parchment. I'm pretty sure that soda/water reacts with the metal and that doesn't help the bottoms one bit! BUT I'd make these again in a heartbeat! The flavor is great, they look great, and they're such a great snack! Thanks for the recipe!!

Jam-filled Muffins

What an unfortunate waste of ingredients. The flavor was okay, but the texture was just awful! I didn't have any trouble with the jam spilling out or anything, and my muffin cups were filled to the very brim. I won't ever make these again. :-(

Paul's Pumpkin Bars

Mmmmm. These are awesome! The only modification I made was to use 1 cup white sugar and 2/3 cup brown sugar - and I completely forgot to add the salt - but they didn't need it! They're just amazing. Went through two huge pans in two days at work. YUMMO! **UPDATE** I've made these at least a dozen times now. In addition to splitting the sugar, I add 1/2 tsp each of pumpkin pie spice, cloves, ginger, and nutmeg. They're amazingly spicey and people go gaga over them!!

French Baguettes

Mmmmm. These are super easy and super tasty. I tried the water-steam trick, but I still didn't end up with a crunchy crust. Didn't matter though - they were gone almost immediately! I did the salt trick another reviewer posted about kneeding the salt in - worked like a charm. So easy and SO YUMMY!

These are really really good! I substituted half & half for the milk and butter for the shortening, just because that's what I had on hand. I mixed the dough as directed, but I didn't kneed it or anything - just spooned it out onto the baking sheet in 6 mounds, flattened it out, and into the oven it went. They rose well and taste wonderful! Great recipe!!

Chococonut Chip Cookies

Not sure what the big deal is about these cookies. They're just sortof blah. Can't taste the coconut, and they looked nothing like the picture - totally flat. I suppose you could up the flour to get them a little fatter, but for me, it's not worth making them again. No one liked them. Shoot!

Hot Fudge Ice Cream Bar Dessert

I've made this more times than I can remember! I use a big jar of HOT FUDGE (not syrup) and mix it right out of the jar with the peanut butter - I don't heat it. Ice cream bars on the bottom, then the chocolate mixture, then some nuts, then coolwhip, then repeat. Little taller than the pan. I pop it in the freezer overnight and bring it out about 20 minutes before we eat. Incredible. Tastes like a peanut buster parfait from Dairy Queen. YUMMO!!!

Hot Fudge Sauce

Woah. This is great. I'm glad I re-read the recipe - I thought it was 4 squares of unsweetened chocolate - glad I caught it's SEMISWEET! Although it could stand to be a little less sweet. I might try with bittersweet chocolate next time. But there WILL be a next time! Yowza!

Lemon Curd

WOW! This is really really good. My first time making lemon curd - I only had bottled lemon juice (GASP!) - but it worked very well. Next time I'll use real lemons and peel and I'm sure the flavor will be even better - but this is hard to beat! So easy and so very good! Thanks for the amazing recipe!

Simply Lemon

I'm one of those people who sees a poor review on a recipe and believes the cook must have done something wrong. :-( This time, however, I'm certain I followed the recipe to a "T" - and it is just not good! The texture of the cheesecake is just awful, and there's no real flavor - at all. Not rich or creamy or anything! I'll make this again only to see what I did wrong - but after this first attempt...ugh. Just not good! Sorry!

Trail Mix Muffins

These are okay. Really a good base muffin you can add about anything to. I couldn't bring myself to use 3/4 cup of oil, so I subbed in 1/2 cup applesauce and 1/4 cup oil. Didn't affect them in the slightest. I used craisins in place of the raisins and dried blueberries in place of the apricots. Walnuts in place of the peanuts. (I seriously hate when people mess with a recipe like that, but I couldn't help myself!) Just personal preference. One thing. I took the advice of another reviewer that said they didn't rise much and filled them to the top. Mine rose a WHOLE LOT and overflowed my pan into a mess! So just be careful with your recipe!

Apple Cake V

I made this cake one time as written, and of course it was great - it was nothing but fat and fruit! WOW! So, knowing how many calories I could save, I made some modifications, and this is now one of my most-requested recipes. My modifications: Instead of 3 cups all-purpose flour, I use 1 cup whole wheat flour and 2 cups AP. I use 1.5 cups white sugar instead of the full 2 cups. I use 1 1/4 cups unsweetened applesauce in place of ALL of the oil. I use 3/4 cup of eggbeaters in place of the eggs. I increase the chopped apples to 4 cups. I omit the nuts. I make the topping as written, but serve it as a sauce on the side rather than dumping it on top. That seems like a lot of changes, but it's really a fabulous cake that CAN BE less awful for you!! :-)

Stovetop Granola

This actually was really good granola; however, I wished I'd taken the advice of some earlier posters. I think the addition of both vanilla and cinnamon would have been really great. As-is, it's just a little bit bland. I don't find it oily in the slightest, and it's plenty sweet. I don't measure anything, so I'm sure I over-did the honey, but I'll for sure make this again. I also made a batch with toasted coconut - really really like that. Will for sure try this one again - saves big $ over buying it at the store!
