Roasted Cauliflower Soup

I thought this was pretty good. A little salty I suggest not adding the salt, or using low sodium broth and then adding salt to taste. I blended half the soup in the blender and added a little extra broth and it still looked like oatmeal.

Marinated Pork Roast with Currant Sauce

I really really liked this recipe! The only thing that I didnt like was the marinade was a bit salty from the soy sauce, so I suggest using low sodium. I followed another reviewers advice and cooked the roast at 425 for 10 minutes to seal the moisture in and this roast came out PERFECT!! Very tender and juicy! I did tent it with foil when I reduced the temperature to 325. Be sure to baste the roast and add a little water to the pan if necessary since a lot of the marinade seemed to dry out in the pan. YUM

Broccoli Cheese Soup V

This soup is GREAT!! Its a bit salty so I would use low sodium broth next time. I also used 1lb velveeta and some aged white cheddar and used broccoli cuts so it would be chunkier. I wish this soup was healthier or Id eat it more often, haha!

This soup tasted great however I docked 1 star because cooking those vegetables in the soup for so long took away the vibrant color and made them rather soft. I would say simmer the soup for less time and then add the veggies during the last 10 minutes.

Perfect Summer Fruit Salad

Blueberry Zucchini Bread

This bread is OK. I think its a little too heavy probably due to all of that oil! Next time Id cut out some of the oil. Its more like a cake than a bread and its a little...bland? Maybe it will taste better tomorrow after the flavors blend a bit but eh..

Scalloped Corn and Broccoli

This was very good but a little sweet for me..next time I will probably only use 1 tb of sugar. Also I used 2 fresh broccoli crowns which I blanched and chopped rather than frozen broccoli-this is a great way to keep it from going to waste!

World's Best Lasagna

BEST RECIPE!!!!! perfect. Only change I made was putting the fennel seeds and italian seasoning in the ricotta a few hours before I made the lasagna so the flavors could blend.

Chicken Tortilla Soup I

I just made this soup for a cold winter day and it hit the spot!! I used a carton of chicken broth rather than the condensed and frozen cubes of cilantro- always a great thing to have on hand since fresh is highly perishable! Its perfect, wouldnt change a thing. Add some chopped jalapeno if you like it spicy.

Zucchini Orzo

This recipe was very bland as-is. I suggest making it the day before to let the flavors blend. I added lemon juice and zest, a good amount of sea salt, and some dried oregano and basil which gave more flavor.

Filet Mignon with Mushroom-Cabernet Gravy

This was pretty darn good. I think 1 cup of wine was a little too much for my taste. I also used chicken broth bc I didnt have beef-definitely would have been better with the beef. I am going to try this recipe again using less wine and a good quality beef stock.

Slow Cooker Taco Soup

This was very good but I think it can be tweaked a bit. The taco seasoning mix made this soup VERY salty...too salty for me. I would suggest seasoning it yourself with chili powder, cumin, coriander, salt, pepper, however youd like, or just use a mexican seasoning blend. Also for those concerned about gas from the beans- I suggest draining and rinsing the beans as much as possible as it is the liquid that cases folks to get gassy and bloated. Finally I think its a good idea to add a little extra water or tomato with liquid since the beans absorb quite a bit. You can also do this before serving. This soup does not need to set for 8 hours. 5-6 is perfectly fine. Its delicious with melted cheese and broken tortilla chips on top!

Pumpkin Carrot Swirl Bars

These taste delicious however I have a problem cutting them. Theyre so moist that when i cut them into bars they stick to the knife and I end up with crumbly, sloppy edges. Not sure the carrot adds anything, so save yourself the work and leave them out.

Baked Maryland Lump Crab Cakes

These were OK but I have to be honest I didnt love them. I dont know why..I think they were a little bland. I browned them in a pan a bit before baking (the mixture was very wet) and I just wasnt thrilled. I will try them again another time to see if they taste different in another batch. I think they just needed something like celery or red pepper, something crunchy..I added a little lemon juice and made a tartar sauce for the side

Macaroni Salad I

This is a good BASE for a macaroni salad but the recipe as-is is lacking flavor. I cut out the tomatoes and used 2 celery stalks, a red pepper and 1/2 of a green pepper. I used about a tablespoon of ranch dessing mix and a little yellow mustard to taste, added some black pepper, dried parsley, and white wine vinegar. This needs to sit an hour or 2 before serving to let the flavors develop. if you use the ranch mix I think you can leave out the onion.

Cheesy Sweet and Savory Spuds

Absolutely a 5 star recipe. My entire family raved about these all through dinner. It never even occured to us to throw a few sweet potatoes in our yukon golds! I probably only used 3/4 cup of cheese if that and mixed it right into a potatoes to cut down on fat.

Savory Mushroom-Barley Soup

I thought this was just OK. I used chicken stock instead of beef broth, maybe thats why I didnt like it that much. I thought it was bland. I added some paprika and worcestershire sauce and I still feel like its missing something. I hope it will taste better in a few hours after the flavors meld a bit.

Geneva's Ultimate Hungarian Mushroom Soup

DELICIOUS!! Rich and creamy without being fattening. I didnt use low sodium broth, and it was perfect. I accidentally used hot paprika instead of sweet and it had a kick, but we loved it! Next time I may use 1/2 sweet 1/2 hot. This is a keeper.

Gourmet Mushroom Risotto

THIS WAS PERFECT! absolutely delicious. I cut down on the mushrooms, added some green peas, cut up asparagus which I blanched and some fresh chopped parsley.
