Geneva's Ultimate Hungarian Mushroom Soup

DELICIOUS!! Rich and creamy without being fattening. I didnt use low sodium broth, and it was perfect. I accidentally used hot paprika instead of sweet and it had a kick, but we loved it! Next time I may use 1/2 sweet 1/2 hot. This is a keeper.

THIS WAS PERFECT! absolutely delicious. I cut down on the mushrooms, added some green peas, cut up asparagus which I blanched and some fresh chopped parsley.

Cranberry Sauce Chicken II

This recipe was a little too soupy for me. I used 3/4 c of russian dressing and 9-not 6 chicken thighs. There was a lot of liquid. I recommend using more chicken or less dressing for the recipe. It was a little too "onion soup mix-ish" so I may cut back on that next time as well and use 1/2 envelope. My point is this recipe can be changed easily to suit your taste and still be great. My husband loved it. I served it with a side of kasha pilaf. Yum!

Slow Cooker Beef Barley Soup

This soup is ok. A little bland. I left out the scallions and used 1 chopped yellow onion instead. The meat was very tender and this makes a LARGE batch of soup. I just felt like it was missing something. Next time I make this, and I will make it again because it has potential, I will use fresh herbs (thyme and parsley) and some mushrooms. I also may use chicken broth instead of beef.

Mushroom, Leek, Chicken Sausage and Tortellini Soup

This is an AWESOME soup!! I think I ate 1/2 of the pot the second it was ready. I used kielbasa instead of the chicken sausage because I think with the mushroom and leek it would be a better blend of flavors, but Im sure its great either way.

Slow Cooker Beef Stew III

This was very good stew. A little watery so I would do like another reviewer said if you want thick stew add a little cornstarch. I left out the onions because with the soup mix I didnt want it to be overpowering, and it came out great. if you like mushrooms use a lot of them because they shrink!

Shrimp Egg Foo Yung

This was pretty good. I didnt have bean sprouts so I lightly steamed asparagus and cut them into small pieces, and I used sliced shitake mushrooms. For some reason I had a really hard time forming a patty. I guess that just takes practice. By preparing the shrimp and asparagus the day before, this was a very quick meal to make when I came home.

Key West Penne

This is a masterpiece! I was able to make a "healthy" version of this recipe. I used Ronzoni whole wheat blend spaghetti instead of Penne. I think this is the best whole wheat pasta out there because it doesnt have a gritty texture and actually tastes like pasta. I used fat free half and half instead of cream and thickened it with 1tsp cornstarch dissolved in a little water before pouring it in. I also suggest topping this with some fresh chopped parsley. This was fast and delicious. Thanks Traci!

Simple Cauliflower Soup

This recipe was great but I made a few changes. I used chicken broth instead of vegetable. I added a pinch of nutmeg and pureed the soup so it was smooth. Then I threw in some leftover cooked kielbasa which added some flavor. It was very easy!

New England Clam Chowder II

This soup is outstanding. I was able to cut a lot of fat from the recipe with the following changes, and no loss of flavor: drain most of the bacon fat, there is still enough in the pan to cook the potato and onion. Use 2 cups of clam broth, and equal parts cream and skim milk until you get your desired thickness. I usually use more skim milk than cream. This may make the soup a little thinner, but I like it that way :) and its much healthier, so you can eat more and not feel guilty! Go ahead, have the 2nd bowl!

Pork Tenderloin with Dijon Marsala Sauce

This recipe was great. However I think the marsala wine took over the sauce. Maybe it was the kind I used. I will make this again but maybe with a milder marsala wine. I also used fat-free half and half to sub for the heavy cream. Obviously the sauce wasnt as thick and rich as it could be but its a good way to cut fat and calories.

Chicken Breasts with Balsamic Vinegar and Garlic

I would use an aged balsamic vinegar next time I make this. Its a little more mellow than regular Balsamic. I also threw in a little marsala wine for taste.

Clark's Quiche

This quiche is absolutely fantastic!!! A+! HOWEVER, I ended up having to run to the store to buy more crusts. I got 4 9" deep dish quiches out of this recipe (one without spinach), so either cut the recipe in half or buy extra pie crusts. these freeze very well. I will definitely make this again.
