Tuna Noodle Casserole from Scratch
Very forgiving recipe. Didn't have mushrooms, egg noodles, or cheddar cheese on hand so used spaghetti noodles and swiss cheese instead. My husband and 8-year-old son both proclaimed it "a keeper" despite the substitutions. Will definately make again.

Terrific Turkey Chili
Very good. Made only minor changes. Used 1.5 lbs of leftover, diced, cooked turkey instead of ground turkey. Used 1/2 t chipotle chili powder is place of the chili pepper flakes. Also, diced one zucchini (all I had on hand) and sauted it together with the onion and green pepper to save a step. Added canned garbonzo beans at the end as recommended. It's a keeper!

Seafood Sandwich
This was surprisingly good! I made it only to use a package of imitation crab that had been lingering in the freezer for too long, but I'd make it again. My in-laws live in Maine so I've enjoyed many lobster rolls over the years. This is a far cry from the real thing, but it's an enjoyable sandwich in its own right.
