My favorite things to cook
Mama was a great Southern cook - some of my favorites are chicken & dumplings, bean soup, fried chicken, and chicken pot pie. I also love to make Grandma's recipes for green tomato pie, and "hot dish" (a Minnesota tradition).
My cooking triumphs
I've always had luck at roasting turkeys! I love to cook for a crowd - Thanksgiving is my favorite cooking day.
My cooking tragedies
Tried to make a vegetarian dish in the crockpot once - no good. I guess I'm not cut out to be a vegetarian!

Easy Chicken Enchiladas
This is a great recipe! I didn't have regular pinto beans, but had some ranch-style beans. The sauce added some great flavor to the chicken mixture! I also added some taco seasoning to the chicken, and added salsa to the bottom of the pan, and also spread a little salsa over the top, then added the cheese on top. We like "saucy" enchiladas! The creamy filling is to die for! Thanks for a great recipe!

I love this recipe! This reminds me of the "hot dish" my family made growing up. I didn't notice any lack of flavor as previous posters have mentioned... however I am in the habit of always seasoning my ground meat while cooking it. I thought this recipe was comforting and delicious!

Tangy Honey Glazed Ham
This glaze was wonderful! I used it on a 3 lb boneless ham, and adjusted the ingredients accordingly. It was simple to make (I omitted the orange juice and zest as I had none) and it made a lovely glazed crust on the ham. Great recipe, thanks!
