Chicken Satay

This is AWESOME! I am allergic to peanuts so I used unsweetened soynut butter but changed nothing. I love the complex flavors of the marinade and the tenderness of the chicken. Thank you so much for this recipe.

Butter Bean Burgers

WOW this is good! I couldn't flip the "burgers" so I put it all in a casserole dish, sprayed with PAM, and baked it for 30 mins at 400. It tastes amazing! I didn't use the oil so that cuts down A LOT of the calories - and makes it stick ;) Also, I used 1/2c panko breadcrumbs instead of crackers as I didn't have any.

Tofu Keema

This is so good! I really like the texture of the frozen/thawed tofu! The only thing I changed was not adding any oil, I just used a non-stick pan and it saved me a lot of calories per serving!

Greek Souzoukaklia

This was really good. I had to omit the raisins as I am diabetic and they are not good for me but it was tasty anyways. I added cumin for a little more flavor and grilled them on the skewers, but they fell off the skewers so they became long burgers. Oh well, it didn't change the flavor. I also roasted some whole sweet potatoes with the meat and added some steamed dijon broccoli to make a complete meal. I will make this again.

Meaty Thick Man Chili

Oh MAN good! I added hot peppers instead of the sweet ones and added some cumin for personal preference. I also browned the meat then threw everything into my slow cooker and went to bed. With that said, this is an amazingly meaty and wonderful chili. It made a ton and it will feed me for a couple of weeks! (I will freeze some) SO GOOD!

Baked Asian-Style Honey Chicken

SUPER! I used 12 chicken thighs that I skinned and boned myself, cut into bite-sized chunks and sprinkled some sesame seeds on top before I baked them. Perfect balance of flavors and really easy to make. I baked them on a foil-lined cookie sheet at 400 for about 15 minutes. SO good! Ate them with tri-color pasta, zucchini, avocado and chopped garlic.

OH YUM! I used pork, omitted the water chestnuts (forgot to buy them) and used chile powder (had it on hand) and these are so yummy! I used red leaf lettuce as that is one of my favorites! Thank you for this recipe!

Coconut Macaroons III

OH MY! So this is what I did. I doubled the amount from "12" to "24" but I wanted more so I thought about what I could do to add more bulk and here's what I did: I used my 1-oz cookie scoop and filled it halfway. THEN, I added 1 (unwrapped) Hershey's Kiss, then filled the scoop the rest of the way. I changed nothing of the original ingredients (but the amount.) These are so good, chewy and sweet and easy to make. So my final yield was 57 cookies. I am bringing them to work and I hope that they like them as much as I do. Thank you for this recipe, I will be making them often. OH! I almost forgot, I cooked them on cookie sheets lined with the non-stick foil and they all came off. UPDATE-- My coworkers LOVED them!

Chewy Chocolate Chip Oatmeal Cookies

Can I give 10 stars? Please? I read most of the reviews and took some of the suggestions and this really is a 10 star cookie. I used butter-flavored shortening and butter, both sugars, AP flour, whole wheat flour and some wheat germ to equal 2 cups. 3 cups of old fashioned oats, vanilla, 1 t baking soda and 1/2 t salt, 3 eggs, pumpkin pie spice, dried cranberries. I am allergic to nuts so I omitted those and the chips, next time I may add the chips though. Perfectly chewy cookies.

Refried Beans Without the Refry

These are AMAZING. I have used pinto and black beans so far with this recipe. I also substituted 3 cups of the water for some beer and OH MY those are tasty beans. I can't believe how good, cheap, and easy these beans are. I can't go back to canned at all now. WOW. WOW. Did I say WOW? WOW!

Greek Pasta with Tomatoes and White Beans

What an easy meal. I didn't have Italian diced tomatoes so I used regular ones and added herbs and spices. I made this for my daughter who is trying vegetarianism and she loved it. The feta is the perfect addition.

This was a great basis for a nice spicy dish. I made it in my slow cooker with some chorizo and black beans added in for more protein. I love the chipolte sauce, so spicy good. I used chicken thighs.

Eileen's Spicy Gingerbread Men

Good Recipe! I am not going to rate the way the dough rolls out, it's just like every other dough--sticky and hard to roll out. BUT I will rate the taste. I loved this cookie. I baked the men for 7 minutes and they were perfect, soft and chewy. Once they were baked, they slid off the tray no problem. I used butter (I don't believe in margarine) and brown sugar for that extra molassas taste! I don't like cloves so I used pumpkin pie spice and extra ginger. Really nice and spicy. I will make these every chance I get. Thank you!

Gingerbread Biscotti

I can't believe how amazing these taste. I made a batch to send to my grandparents for Christmas and ended up eating quite a few of them. I loved them. I think next time I am going to throw in some fresh ginger too to kick up the spicyness. These biscotti go very well with a nice cup of hot chai tea also.

Corn Dog Muffins

I make these all the time but without the added sugar. I use cocktail weiners instead of full size hot dogs and two of the mini dogs fit perfectly in a standard muffin tin. I wrap them in plastic when cooled and freeze them, when my daughter gets home from school, she heats one up in the microwave and had a great fun snack.

Chicken Jalfrezi

Oh my this is sooooo good. I used 1 large (28oz) can of drained chickpeas instead of the chicken and served it over rice. Even my teen liked it. It smells great when it's cooking and it was so easy to make. I will be making this again. GREAT vegetarian meal with the chickpeas. UPDATE: I had some Jalfrezi at a local Indian restaurant, it wasn't as good as this recipe. This one rocks.

Rye Beer Bread

I made this today (well started the mash last night.) It's SO GOOD and really easy. I used molasses instead of sugar, doubled the caraway seeds and used Bass Pale Ale for the beer. It was sweet and crusty and wonderful. Thank you for the great recipe. I will be making this again and again. I can't wait to try it with chicken salad or tuna!
