Marshmallow Treats

I use stick margarine instead of butter, and add 1/2 tsp of vanilla and 2 tbls corn syrup to the marshmallows. After I add the cereal and take it off the stove, I add 1 cup of large marshmallows cut into quarters. They look and taste awesome!

Carrot Souffle

I didn't have enough carrots on hand, but I had a couple of sweet potatoes in the fridge, so I added them. I only used 1/4 cup sugar and added a teaspoon of cinnamon. It was really delicious and not too sweet.

Candied Sweet Potatoes

Very good. I also omitted the orange juice, and in the last minute of cooking I added 1/4 cup heavy cream and 1/4 cup chopped pecans. It cut the sweetness and added some creaminess.

J.P.'s Big Daddy Biscuits

Very tasty. I only had skim milk, so I used half milk - half sour cream. The biscuits didn't rise very high, but I attribute that to either the sour cream or old baking powder. I will definitely make these again.

Dark Chocolate Cake I

I used butter flavored shortening (no trans fat) instead of butter and it was really good and moist. I frosted it with the Fluffy Peanut Butter Frosting from this site, and it was perfection!!

Apple Fritters I

I followed Gr8typist's recommendations, and this was fantastic! Also, I halved the recipe, and it was enough for 4 people. Low and slow should be your mantra while frying these. The recipe says 375, but 300-325 was hot enough. Otherwise, they get overdone on the outside and you have batter inside.

Quick Macaroni and Cheese

Easy and delicious! I followed the other reviewer's suggestion and added a teaspoon of salt. I transfered it to my own glass baking dish and sprinkled crushed Ritz crackers on top for that homemade touch. I'll make this again.

These are great! I added an extra half cup of nuts because I ground too much. Also, instead of sprinkling them with confectioners sugar, I rolled them in it while they were still just a little warm.

Yummy Eggnog Pie

Outstanding! My husband and kids love it. I cut the cream in half and added 2 tbl of rum and 1 tsp of vanilla. The consistency was perfect, like a banana cream pie. I could eat the whole thing myself! I plan to make this again for an upcoming family Christmas party.

Apple Gingerbread Cake

So easy and delicious! I found it needed an extra 5 minutes baking time, though. I used Arkansas Black apples and I added 1/2 tsp cinnamon to the mix. I'll make this cake over and over again.

I added some raisins, a little brown sugar, cinnamon and nutmeg, but the best substitution was fat free buttermilk for the half and half. It tasted so good with a lot less fat.

Carrot Cake IV

I added one large grated carrot to the batter to make it look more authentic. I also added 1/2 finely chopped walnuts. I made it a few days ahead and refrigerated it. Before frosting the cake, I drizzled about 1/2 cup more pineapple juice on it for moisture. I frosted it with a simple cream cheese frosting and sprinkled it with toasted pecans and coconut. It got RAVE reviews from my family and friends.

Mini Cheesecakes I

I bought a premade chocolate cookie crust (on sale cheap) and crumbled it into the muffin cups instead of using cookies. Before baking, I put a tablespoon of jam or melted chocolate on top of each cheesecake and swirled it through with a toothpick. They looked professional and tasted fantastic!

Pumpkin Crunch Cake

I made this for an office party and it got rave reviews. However, when I make it again for Christmas, I will cut the cake mix in half. The crumb top was so thick it had to be eaten upside down to get through it. Also, I will use unsalted butter. Instead of whipped topping, I melted a can of cream cheese frosting in the microwave and drizzled it over the finished cake. Yum.
