About this Cook
I am a fitness instructor, I have 3 teenagers, I have been married 20 years and am also a stay at home mom.
My favorite things to cook
I LOVE to bake, try new things. I like to try and recreate recipes that I have at restaurants. I also like to cook all types of Italian cuisine.
My favorite family cooking traditions
Making loves and loaves of Irish soda bread. I also like to have Halloween theme dinner parties. And, we have an annual cousins cookie exchange at Christmas every year. That's fun.
My cooking triumphs
So many. I am a good bread maker.
My cooking tragedies
Feeding my husband plaster on a pizza accidentally while restoring an old house. It fell from the ceiling (with out my knowledge) into the cheese. Who knew it was there? Until my hubby almost cracked a tooth on it. We still laugh about it 15 years later. Well, I do....

Tilapia Scampi
Yumm, I added a splash of white wine. I will make it in a saute pan on top of the stove next time, to make a bit thicker sauce. Delish! Quick, and easy. Thanks for the submission

Crustless Cranberry Pie
Delish! I made mine gluten free, and added a 1/2 t xanthan gum to assure it it held together. And also, made a crumb topping using almonds instead of walnuts, as,we are allergic. Yummmo!!! Next time I make this I will add a smidge of vanilla as well. Thanks for the great recipe:)

Home-Style Brown Rice Pilaf
Our local Chinese carry out, way over does it on the rice, and we always have tons of leftovers. So, I decided to use that rice for this dish instead of throwing it away. Delicioso!!
