Chicken Enchiladas with Creamy Green Chile Sauce

These were good. I would make a few modifications next time. I would add a little of the sauce to the chicken mixture just to keep the filling from being so dry. And I would use flour tortillas as I just don't have much luck rolling corn tortillas without them splitting.

Down Home Baked Beans

I had to doctor these up some to suit our taste. I drained the beans as my first batch turned out too runny. I cut the brown sugar down to 1/2 cup as we don't like them sweet and added hot sauce.

I've definitely made better. I added rice to stretch the recipe and added taco seasoning mix to give it some flavor, otherwise it would have been bland.

The sauce was very spicy. You may want to cut the spices in half if you don't like spicy food. I turned my sauce into gravy since the family prefers roast with mashed potatoes.
