Stuffed Green Peppers
Really enjoyed this! Used red, green and yellow peppers and brown rice. Added some V-8 to the rice mix and some more poured on top before baking. Didn't have any sauce but throughly enjoyed this for dinner and again at breakfast!

Garlic Salmon
Yum. This is the only way I make salmon and it always comes out great. I use dry dill most of the time and leave out onions sometimes as well. Still really good. I love to make this and roasted tomatoes and have them for lunch the next day, both cold. Thanks for a great recipe!

Simple Spinach Lasagna
Wow, my very first time making lasagna and made 2 huge batches with this recipe. Took others advice and used cottage cheese and ricotta cheese. I also ran low on sauce but just tried to shake the bottle with some water and all turned out ok. I also let one cool down and then wrapped little portions in foil and put in freezer bags. Takes about 5-7 minutes in the microwave to heat up and makes a very simple dinner for us single folk!
