Taco Pie
Quick, easy and tastes great! I put Doritos only on what I thought we would eat that night so the Doritos wouldnt get soggy. Still good re-heated for lunch the next day, just added chips after heated up and added my toppings.

Mexican Style Shredded Pork
So many possibilities & great flavor!! I couldn't find the chipolte sauce either, used chipotle peppers in adobo sauce by just chopping 2 pepper and using all the sauce. Added about 1/2 a jar of Pace Hot salsa, mrs dash chipolte seasoning, cumin, red pepper flakes, chili powder and a small chopped onion. Served 1)over spanish rice topped w/ shredded cheese, salsa and sour cream, 2)did the same in a soft shell tortilla, 3)put on hoagie buns w/ cheese & salsa and had sandwich style, 4)put on hoagie buns another time w/ pepperconi peppers and cheese and toasted in oven topped w/ salsa. did not do this way but next time will use for enchiladas.

Chicken Tortilla Soup V
My favorite soup ever! I did use a lot more chicken broth, used pace hot salsa, 2 cans of mexicorn, add some canned green chilis. Served with sour cream, chili fritos and shredded cheese on top.
