Baked Kale Chips

I baked them at 325 for 8 mins with a flip half-way through. WHAT A FUN RECIPE for my first experience with kale!

Zucchini and Potato Bake

Used a little cajun seasoning in place of the paprika. I eat this as a main dish (vegetarian) and also serve it as a side dish with my husband's steak. Great right out of the oven...a little mushy as a leftover. Still tasty though!!

Creamy Vegan Corn Chowder

A yummy, hearty, vegan soup! 4 stars because I changed a few things. Used Earth Balance Spread instead of olive oil for a more buttery flavor. Added a can of cream style corn at the end to enhance the corn flavor. I can't have chowder without potato...so I added about 2 cups, boiled. Will definitely be making this all fall/winter!

Fast and Delicious Black Bean Soup

I pureed the broth, veggies and 1 can of beans for a flavorful base, without veggie chunks....then added the 2nd can of whole beans. 3 cloves of garlic was a bit much, so I added a can of Ro-Tel tomatoes with cilantro and lime at the end to cut the garlic flavor. Yummy! (Also omitted the ham).

Val and Jess's Vegan Avocado Dip

As a sometimes struggling new vegan (8 weeks!)...this is just the mexican delight I was looking for. I was always a fan of taco dip, seven layer dip, salsa con queso... That was a tough void to fill until now. I love this recipe...and it's even yummier on day 2. I left out the extra onion (my salsa was pretty onion-y) and used a lime instead of lemon. Thanks for this yummy invention!

Chicken Caesar Pasta

Like another reviewer said -- I almost feel like I shouldn't be rating this because I did change it quite a bit. I had to give it kudos though because it's a great idea and my husband said it was one of my best experiments yet! I made a cold pasta salad with penne, diced grape tomoatoes, red & green pepper, cucumber and black pepper, mixed with a tiny bit of mayo and creamy caesar dressing. Marinated my chicken breasts in a little bit of the dressing then grilled them. Sliced the chicken and served it warm over the cold pasta and sprinkled fresh parmesan over the entire dish. Fabulous...we'll be eating this all summer!

Awesome Slow Cooker Pot Roast

My first pot roast and it was PERFECT! The gravy was wonderful and the meat....so tender! I brought leftovers to work today and it fell apart on my plastic fork. I can't wait to make this for guests!

Super Soup

Loved this! Used leftover turkey breast and swapped out one of the cans of cream of chicken for cream of broccoli...okay and maybe added some extra potato...but this one is definitely a keeper! Perfect for these cold New England days!
