Thanksgiving is a time to remember the things you are thankful for.  This year I don't have to go back very far to realize just how lucky I am.  Hurricane Sandy changed many peoples lives and living at the Jersey shore gave my family a lot to be thankful for. The night of the storm was very… MORE

About this Cook
I have been happily married for 45 years and we have 2 grown children and 4 grandchildren. My son and his family live nearby and my daughter and her family live 3 hours away.
My favorite things to cook
I love cooking things I can be creative with. My favorite thing to make is a new recipe. Using fresh grown herbs and home grown vegetables has added a lot of satisfaction to my cooking. I love presentation and the WOW factor! Catching fish in the morning and having them for dinner is a real treat.
My favorite family cooking traditions
Every Easter I hold the annual Easter Egg Hunt. Each year it grows more as the family expands. We spend Thanksgiving with my daughter's family near Hershey Pa. On even years, my son and his family join us. Good food, good times in the kitchen, good friends, and football, followed by early morning shopping and a night at Hershey Park for the kids.
My cooking triumphs
My sister and I made my mother's wedding cake when, as a widow, she married one of my dad's friends. I don't think anything could top the feeling of finding one of my recipes mentioned in a magazine.
My cooking tragedies
While delivering a cake to my husband's workplace, my little one sat on it! I took the cake home, called hubby and the guys said "bring it anyway!" Fortunately, it had plastic wrap. Also, I set off the fire alarm at Disney World's Fort Wilderness while cooking bacon. The fire car came with it's lights flashing. It was soooo embarrassing.

Crispy Rosemary Chicken and Fries
VERY GOOD AND CRISPY! To make this into a one dish meal, I added baby carrots and cut the potatoes into chunks. The timing was perfect. The chicken was crispy and the potatoes and carrots were perfectly seasoned. I didn't have fresh herbs so I had to use dried. I look forward to making this when my herb garden is in full swing. Thank you Sandy Witek for such a fabulous recipe!

Broccoli Cheese Soup
LOVED IT! I tried to stay as close to the recipe as possible using what I had on hand. I used 2% milk and because I did, I added another ounce of cheese. I only had bouillon, so I replaced the chicken broth with 7 cups of water and 7 teaspoons of bouillon. I thought the garlic may be a little too strong for us so I cut it to 1/2 teaspoon after reading some reviews. I did keep the butter amount the same as I felt it was for flavor as well as sautéing the onion. This is an absolutely wonderful recipe and I will be making it again. I'm going to use fresh broccoli next time as my frozen broccoli was chopped more than I would have liked. Thank you Karin Christian for sharing such a wonderful recipe!

Braised Corned Beef Brisket
EXCELLENT! I knew a snow storm was coming so I purchased a corned beef brisket to make as a comfort meal. The snow storm came but I had forgotten to get "Kitchen Bouquet" and aluminum foil. As there was no going to the store, I substituted Yoshida's Original Gourmet sauce. I wasn't sure whether to go with my clay pot or slow cooker since I didn't have any foil. (They both have lids). Searching through the reviews, I saw that mis7up had success with the slow cooker so I chose that. (thank you mis7up!) It certainly couldn't have turned out any better. I also sliced the corned beef thin with my electric slicer so I can use it for sandwiches. Thank you Mauigirl for such a wonderful EXCELLENT recipe! It's a keeper!!
