Whole Wheat Banana Nut Bread
This turned out fantastic! Very moist and tasted wonderful. Awesome recipe. I used 2 1/2 medium bananas (however many cups that made I'm not sure).

Baingan Bharta (Eggplant Curry)
This was so delicious. Rather than baking the eggplant I added it raw to the pot after cooking the onion and cooked it that way.

Yummy Vegan Chocolate Pudding
This is the best cornstarch, vegan pudding recipe I have ever tried - and it is so easy and nearly foolproof.
