Oven Baked Jambalaya
excellent tasty dish, makes a huge amount, freezes well. i used chicken sausage w/jalapeno peppers - great addition. Easier to make in 2 roasting pans.

Slow Cooker Chicken Creole
I doubled the amount of chicken and pretty much kept the rest of the recipe the same, however I used the Creole Seasoning Blend found also on this site (which is an excellent seasoning!!) Cooked on low for 12 hours, and the chicken was fork tender. Great recipe, thanks!!

Hot Cocoa Mix
So creamy! Better than the hot cocoa envelopes. I took other readers' suggestions & used 3 cups of chocolate drink mix, and added 1/4 c. cocoa and the results were wonderful. Am giving this as gifts this Christmas. Great recipe
