I am mother of three beautiful children and work full time as an accountant. I love to cook, but with my schedule, it has been harder and harder to find the time. Being on a tight budget, I spend a lot of time on meal plans to cut back on food spoilage, and wasted time trying to figure out whats for dinner.
My favorite things to cook
I love to bake, but I try not to keep too many sweets around, so I save that for special occasions. My family is hard to please since everyone has different tastes, but coming up with a meal they will all enjoy brings me great pleasure.
My favorite family cooking traditions
My extened family is very large, so we have a party once a year around the holidays and everyone brings a signature dish. Mine are the double layer pumpkin cheesecake from this site, and a variation of party potatoes for a crowd. Every year I have to increase the quantity in order to have enough!
My cooking triumphs
I make a pretty good steak, I've finally started making cheesecakes that don't crack, and I can make homeade pizza dough AND flip it in the air(my kids love that). I make sure my family has a homecooked meal every night and that we all sit at the table together. My parents couldnt always do that, so its something I want to do for my kids.
My cooking tragedies
I have scorched milk for potatoes augrautin once, without realizing it, it tasted awful and anytime I make it now, I still smell that scorched smell just from the memory. That was over 10yrs ago!

Becky's Chicken Salad
I have been a member here for a few years, and have only found a couple of recipes here that have inspired me to rate. I am eating this with crackers for lunch right now...and I am inspired. The only thing I changed was to use 1 c. miracle whip in place of the mayo and cream, which I didn't have on hand. I LOVE this recipe! I might try red grapes and add in some apple next time too :) Thank you Becky!

Awesome Sausage, Apple and Cranberry Stuffing
This is such a great alternative to traditional stuffing. I doubled the amount of bread crumbs and turkey stock to make it a little closer to the texture my family is used to, but the flavors are wonderful. I have tried both turkey and pork sausage, but we preffered the pork.

Double Layer Pumpkin Cheesecake
I love this recipe! I crush the prepared crust and line the bottom of my springform pan with it, then set in a water bath to prevent cracks while baking. I used prepaired pumpkin pie filling(to make it easier) and cut out the additional spices so the pumkin doesnt overpower the cheesecake layer. My family requests this every year for holiday meals!
